Terrible bakers take on a trio of festive holiday-hat mini cakes before tackling a pop-up Groundhog Day cake that's full of surprises.

Ooh, hello! Hi!

Ooh, you made it. Come on in.

This is Nailed It!, where the cakes aim
to be the life of the party...

-[party horn]
-...but end up being a party-pooper.

I'm your hostess
with the mostess, Nicole Byer.

Now, we've done a lot of holiday shows
about Christmas, New Year's, Hanukkah...

Not Kwanzaa.

Not cool.

But today, we have three amateur bakers

who are ready to recreate
professional desserts



themed around other holidays!

At stake is a chance to win $10,000
and the Nailed It! trophy.

Which baker's gonna
turn the heat up on this party?

Let's find out!

My name is Maddy Wojdak.

I'm from Los Angeles, California.

I am always going, going, going.

I have a million different hobbies.

Every single minute of my schedule is
usually filled up with just something.

Baking really de-stresses me
and gets a lot of thoughts out of my head.

Every time I bake,
I'll do something different.

I love trying new things,



and Nailed It! is definitely
a new thing for me.

My name's Adam Bourque.

I'm 39 years old... "Young."

Young.

I would count my baking skills at a four.

I'm definitely curious to see how I do,

even if I look like a ding-dong on TV.

I have a twin brother.

His name's Josh.

He's one minute older than me.
I call him Grandpa.

And we will be baking
against each other today.

Ta-da!

My name is Josh Bourque.

I live here in Los Angeles.

I've been baking
as long as I can remember.

Even back when I was a child,
baking with my nan in Canada.

I used to make mini-chip
butter cookies in high school,

and my friends would
call me Box Cookie Boy

because they tasted so good, they always
thought they were not baked by me.

[Nicole] Welcome.

Okay, Josh, I'm confused because
there's somebody here that looks like you.

Tell me about this.

What are you two?

[laughing]

Adam is my twin.

Adam, who do you think is gonna win?

Oh, me, of course.

Or Maddy. Josh can...

[laughing]

-I love it. It's just not Josh.
-I'll give it to Maddy.

It's gonna be really interesting
trying to keep Adam and Josh straight.

If I have to know, one's in the grey shirt
and one's in green.

Hopefully that's gonna make
my life easier.

Well, bakers,
he's a treat for every occasion.

and chocolatier, mi amor.

And we have a special guest with us today.

All right, bakers.

Let's get to our first challenge.
It's called Baker's Choice.

Why celebrate one holiday
when you can celebrate at least three?

You'll be the best-dressed guest
when you make these...

Holiday Hat Mini Cakes!

Each of these sweet treats is inspired
by an annual celebration.

Whether it be St. Patrick's Day,

Mardi Gras, or the Fourth of July,

you'll take just one bite
and you'll be saying,

"Ooh! There's a party in my mouth!"

[laughing]

These Holiday Hat Mini Cakes
are stacked cake,

each built with multi-color layers,
and each has its own distinct flavor.

Peppermint for St. Patrick,

rum for Mardi Gras,
and bubblegum for the Fourth of July.

The cakes have
a buttercream and fondant coating

with modeling chocolate used
for the figure and decorative details.

The question is,
which one will you get? Josh?

Mardi Gras!

[Nicole] Mardi Gras, okay.
Maddy, what would you like?

-I'll go for St. Paddy's Day.
-[Nicole] Ooh, yeah!

That means you're left with
the Fourth of July!

-The Canadian is left with Fourth of July!
-[laughing]

Well, bakers, you have 45 minutes,

and I think it starts now.

Go! Oh.

Uh... let's see here.

I'm nervous, but excited.

"One container of cake mix."

Where would the cake mix be?

I don't know where the cake mix would be.

So, Jacques, how would you go
about making these Holiday Mini Hat Cakes?

The first thing, of course, again,
it's to make the cake batter.

Making sure to include the rum,
peppermint or bubblegum flavor.

Then, divide the batter
and color it into three different layers.

While the cake bakes, make the buttercream

and work on the holiday figurine
that goes on top.

When the cake cools, layer the cake
with buttercream, wrap it in fondant,

add the rest of the details
that make this cake a true celebration.

Cannot waste a minute.

Wow. This feels like a race now.

Eight eggs.

Mom, don't judge me
if I get any shells in here.

My twin brother Adam and I,
we're so used to baking together.

To separate us is a little nerve-wracking,

but I think it's going to be
a good test for the both of us.

'Cause why not do things
you're afraid to do?

I feel like rum is always,
like, a really strong flavor,

so I'm gonna do only one teaspoon.

I don't want it to be overpowering.

I see Josh putting one teaspoon
of the flavor into the batter.

-[Jacques] Might be not enough.
-Oh, no.

-I want the rum!
-You know I love me some rum.

[chuckles]

The secret of those batters is
to not overmix it.

Josh spins that thing a long time,
and that gives a very elastic cake

instead of a... melting cake, moist cake.

Ooh.

All right. Let's see here.

Okay. Yellow.

[Jacques] Oh, he's coloring in the pan.

The batter's not going to be well-mixed.
I mean, you don't do that.

And there's barely any dye in this batter.

I don't think
we're gonna see a lot of colors.

Interesting.

That's so crazy that whoever comes in last

is executed.

[laughing]

Gotta throw these in the oven.

It's gonna be strong.

I have never baked competitively before,

but I think the amount of cooking shows
and Nailed It! that I have watched

is gonna help me out.

Tastes like cake.
Gonna go grab my food coloring.

Uh-oh. There she goes.

It's good seeing you. Bye.

[laughs]

[Jacques] Maddy is
coloring it the right way.

She's putting it in three different bowls,
so she's gonna color it the right way.

So that's yellow. Okay.

They are going in.

Are you kidding me?

This little Uncle Sam is the cutest.
I can't wait to nail this.

[record scratch]

[laughs]

I'm definitely nervous
making this Fourth of July hat.

Usually, I get 45 minutes,
you know, to make a boxed cake.

Bubblegum flavor.

Let's just put in...
I don't want it to be too strong.

[Jacques] Nobody put enough flavoring in.

[gasps] Mon Dieu!

-Mon Dieu! Oh!
-[Nicole laughs]

Well, it looks kinda like
it's coming along.

Can you believe that Adam
still hasn't put his cakes in the oven?

I'm kinda far behind everyone else here.

[Jacques and Reggie chant]

Okay. "Make the buttercream.
Two sticks of butter."

Milk. I'll put it in the microwave,
make it room temperature.

Jacques, why is Maddy microwaving milk?

I think it's no need,
except if she wants to drink warm milk?

[Jacques] I don't know!

That's probably close to
a good consistency.

Woo! Lovely.

[chuckles]

Remember, this is all being filmed.

Okay, I need to start working
on my little dude, my leprechaun friend.

Ay, ay, ay. Red, white, blue.
I'm just gonna take it all.

Oh, Lord. So many colors.

I didn't think
I'd sweat this much, but hey.

I cannot see any brown,
any black modeling chocolate.

How do I make my girl a woman of color?

Nicole, I am so sorry.

I know you're going to look at this
and be like,

"What the heck was Josh doing?"

I don't see any darker
modeling chocolate back there.

So, she's gonna be
a white girl with red hair.

Please forgive me. [kisses]

Oh, my gosh. How...

I can't sculpt a stick man,
let alone a woman.

Okay.

Ten minutes and 35 seconds!

Oh, my God. Are you kidding me?

Looking good!

-I think it's gonna be good.
-Josh, are those cakes done?

That one's... Oh.

Don't... Don't look at me.

You're so good, Nicole.

Well, I want a cooked cake.

So, I can't feed that to the judges.

So, I'm gonna do two layers instead.

It's gonna be very hot
and melt all this buttercream.

Super beautiful. I guess I didn't put
enough food coloring in it.

Oh, God. It's still hot, though.

I... [sighs]

Maddy, put some hustle in there! You know?

But they're hot! My buttercream!

Get to movin'! Get to steppin'!

-[Maddy] I'm working on it!
-Maddy, don't let me down!

[Nicole] Three minutes, guys!

We wanna see the figurine
at the top of the hat.

So, please pay attention to details.

I'm gonna have to
take these cakes outta here.

Looks like Adam's trying
to get his cakes out of the old pans.

-[Nicole] Boy.
-Oh!

Oh, no! [chuckles]

Buttercream, buttercream, buttercream.

-[Reggie] I mean, they look perfect.
-Ugh.

[laughs]

He's not gonna have time
to do his fondant.

I have no idea
how he's even gonna do this.

-Me either.
-[Adam] Oh, my gosh.

Oh, geez.

This is just too much to handle.

Go back up. I know you're melty.
I know you're sad.

There's tons of time.

[chuckles]

Wow.

This is gonna be the brim.
Since mine is a lot bigger than I thought,

it's more of a fedora.

Why? Why did I do this?

Well, this is gonna have to be the hat.

It's what I have to do at this point.

Ay, Dios mio!

Here we go. [chuckles]

Yeah, not a Swedish cake. [laughs]

[Reggie laughs]

My Uncle Sam is more like
a ghost with slothy arms.

She looks a little naked,
so she's gonna be decent.

[Nicole] Get the decorations going, Maddy!

-Josh, worry about your own self.

Oh, the buckle! Let's paint it on.

[laughs]

-Oh, no!

[laughs] Oh, my God. It's so bad.

This is the Holiday Hat Mini Cake
you were trying to make.

Let's see what you made!

[Josh] Nailed it!

[laughing]

-Wow.

[Josh] She had a good night
at the Mardi Gras.

[Nicole] You don't have
the height of the cake.

We lose the height,
and that's a bit unfortunate

because you cannot really see the hat.

We gave you a cake
with a nice Black lady on top.

-[Josh] I know.
-And you served us a nude white woman.

I failed. So, I apologize.

All right, Jacques. Let's taste this cake.

[Jacques] Let's try it. And we have
only two colors instead of three colors.

-Je veux remercier.
-Merci beaucoup.

[chuckles] It's like...
It's kind of like a memory foam.

It's, like, very difficult to achieve.

I'm not tasting rum at all.

The three of us love rum!

Next time, maybe be
a little bit more liberal with the flavors

so we can taste it.

-I definitely will.
-[Nicole] Okay.

and you colored it

with the three different colors.

-[Jacques] Pretty good.

[Reggie] The texture is...

It's definitely less memory foam.

-[Jacques] The flavor's very mild.

I was hoping for the party in my mouth.

I didn't find it.

It's an evening at home with tea
rather than a party.

-[laughs]

I truly like how confident you were
that you did better than your brother.

A lot of the details are gone.

Eh, if you want to call that a rim,
I mean, maybe, yeah.

Look, you have a cake.
You have a person on it.

You have the blue, the red,
all those colors. So let's...

-Let's try it. I don't know.
-I've never seen Jacques like this!

[funky music]

[Nicole] Ooh, he's spicy!

Let's see if this cake kills us!

[chuckling]

-Reggie.

-I'm trying to find the flavor.
-[Nicole] Mm.

What was the flavor supposed to be?

-Bubblegum.
-Oh!

[Jacques] I don't find bubblegum.

The cake is actually... It's baked.
It's baked through.

I like that you have the three colors
of your cake. They're well-defined.

-[Reggie] It's interesting.

We have a hard decision to make.

I think we should go make it.

You're making a Groundhog Pop-Up Cake!

Oh, my...

-[Maddy] I love it!
-You kidding me? [laughs]

[Jacques] This Pop-Up Groundhog Cake
has another surprise.

It's a spicy corn cake
made with corn and jalapenos

to pop up your taste buds as well.

Oh, my God.

[Jacques] It's shaped like a tree stump

using buttercream and fondant
for decoration.

[Maddy] Okay, awesome.

And, Adam, since you were struggling
a little bit in that last round,

we're gonna give you a helping hand.

You have the Smack-A-Hog button.

Hit it, and for three minutes,

the opposing bakers will have to
release some aggression

by playing Smack-A-Hog!
I hope you use it well.

I will. I promise.

Bakers, you guys have 90 minutes
on the clock, and it started now.

[Nicole] Yes! Go! Go!

Okay.

"Two cups melted butter.
Chopped jalapenos."

Get all my dry ingredients.

Jacques, how would you go about making
this Groundhog Pop-Up Cake?

So, the first thing to do is
to make the corn cake batter,

taking care to add
enough jalapeno to taste.

When the cakes are in the oven,

work on the buttercream
and make the adorable groundhog.

When the cakes are baked and cooled,

stack them and cover them with fondant
to make the log shape.

Then, add the mushrooms, flowers,
drop in the groundhog, and voilà!

You have a beautiful
Pop-Up Groundhog Cake.

-Wow.
-Dang!

So, that's quite a bit of work.

Last time I didn't flavor it enough,

so we'll see if
two jalapenos each is enough.

Baking with jalapenos is
definitely different.

Open up the cornmeal!

I love a little kick,

but I tend to believe
that sweets should be sweet.

So, thinking of a corn-jalapeno cake,
I was like, "Oh!"

If they want jalapeno,
they'll get jalapeno.

But that might give
some really good flavor to the batter.

Ooh. Fresh jalapenos.

Oh, those are spicy.

Hope it's nice and hot for the judges.

Oh, my lard.

If you eat that cake, you'll hurt twice.
Today and tomorrow. Watch out.

But, Jacques, sometimes it's nice
to feel something, okay?

-Okay.
-She's a lonely gal.

[laughs]

-[Nicole] Josh.
-Yeah?

-How do you think your brother's doing?
-Hopefully better than last time.

-Oh!
-That's enough.

-[Nicole] Wow.

My hope is they will spend so much time
competing against each other

that I'll slip under their radar
and get through and win. [laughs]

Oh! Be smarter than the can, Adam.

[Reggie] Hey, Adam.

How's it going with that, uh,
easy-to-use can opener?

This one might be a little dull,
or I'm a little dull. I don't know.

[laughs]

-Probably not the smartest thing to do.
-He did it!

-Oh, he did it!
-Oh!

I feel like canned is gonna be
a better choice than the fresh,

'cause the fresh is, like, spicier,
but has less...

It's less concentrated.

Adam and Maddy are using
the canned jalapeno.

[Nicole] I would use fresh.

I think anytime you have
the opportunity to use fresh,

-use the fresh.
-Exactly.

Let's start with a little bit.

Oh, no. Just pretend that didn't happen.

Bakers, almost 30 minutes.
Where are the cakes in the oven?

They're about to go in!

Maddy, just get it done!

Just 'cause you have the gold on
doesn't mean you've got the... rolled on.

-[crickets chirp]
-[groundhog groans]

Put these in.

Okay.

We're going with it.

It's time for buttercream.

I know how to whip butter. What, what!

I'm gonna turn this down a little bit.

[Maddy] It's looking good.
It looks like frosting.

I'm gonna make all my buttercream green

because if anything, like, peeks through,
it'll look purposeful, maybe?

-[phone ringing]
-Ooh!

-My giant phone is ringing!
-Oh.

-Oh! Jason!
-Hello, Nicole?

Jacques, it's our favorite
guest judge ever,

Jason Mantzoukas.

-Die!
-[Nicole laughs]

[screams]

-Chill out, Rob!
-Rob.

-Are you okay, for real?
-[Nicole laughs]

[Jason] I just wanted to check in.

What are you guys baking today?

Today, they're baking corn-jalapeno cakes.

Hot corn cakes? No thank you.

[laughing]

Reggie! Nice! How's everybody doing?

Look at these clowns. Where's Rob?

[Nicole] Rob!

-Jason Mantzoukas says hello!
-Look at those calves.

Rob, can you hold it together
enough to get this?

-[Jason] Rob is weeping and in a sweat.
-[Nicole] Sobbing at his camera!

This guy's gonna get fired! [echoes]

Is he blowin' it?

[laughing]

-[Reggie] Production over.
-Get outta here!

[laughing]

Wes just told me I have to hang up.

Oh!

-Okay.

Josh's cakes are out of the oven...

[gasps]

...while Maddy and Adam are still baking.

[Josh] Hopefully, they look okay.

I only have one hand, though, so...

-Ha-ha!
-[Nicole] Don't put it on the display!

-Don't desecrate the display!
-[Josh] Don't judge me!

[laughs] "Don't judge me."

But that's exactly what we're doing.

-Yes, we're... We're judges.
-[laughing]

They're looking pretty good.
I'm gonna put them in the blast chiller.

I'm gonna start making our friend.
Last time I messed up on decorations.

Hi! Oh!

Wait, Maddy, did you drop your groundhog?

[groundhog] No!

-Yeah.
-Oh, now it's a real groundhog.

-Ooh!
-[Reggie] Yeah.

It's okay, I did it once.
It won't take long to do again.

Thirty-one minutes remain!

Oh, are you kidding me? [chuckles]

At this point,
I'm definitely feeling a bit behind.

It's a groundhog.

A lot behind.

My gosh. They're so far ahead of me.

Well, you know what?

Smack-A-Hog!

[Nicole] Oh, wow! We have a Smack-A-Hog!

Oh, my Lord!

Smack the hogs!

-Oh.
-[Jacques] They do that for three minutes?

They'll be dead by three minutes!

I hope you're having fun, Adam,
while we're smacking hogs.

Don't worry, I'm not. I'm stressed out.

Are these groundhogs
or are they llamas that were dyed brown?

Are you insulting our art department?

-Oh, my...
-Adam's getting cakes out.

[Adam] Oh!

[Adam] I'm super excited I have cakes.

when you're playing this.

It's nothing when you're baking.

-[Reggie] Oh!
-[laughing]

-Oh! The hogs have a life of their own!
-[Jacques] That was funny!

[Josh] I'm gonna do the little gopher guy.

So, let's give him little eyes.

It's probably
the best thing I've ever made.

[groundhog groans]

We've got some eyeballs here.

Like it's a vampire groundhog.

[horror music playing]

Whoa!

Oh. No, no, no, Adam.

What am I doing?

Don't forget buttercream. Silly, silly.

-[Nicole] Should be... Oh!
-Wow, look at that.

-[Nicole] Nice cake.
-[Reggie] She's got good height going on.

I'm just gonna do
a couple pieces at a time.

It'll look like bark.

That's on purpose.

Not at all because I'm low on time.

It's gonna give it a little bit of a...
mountainous terrain.

'Cause he's on a hill.

Has everyone put
their groundhogs down the holes?

Not yet!

[groundhog] Uh-oh!

[groundhog] No!

Oh, he's down there.

-[groundhog squeals]
-[crashing]

That's how it's gonna go in. [laughs]

-Two minutes remain!
-Woo!

It's supposed to look rocky, so... Hey.

Ta-da.

Just rip that on open.

Come on. [laughs]

Making little flowers.
They're gonna be little dots on the cake.

I just hope that comes out.

There's no way an animal could
bust through a tree trunk like that.

-[laughs] Yeah, it's not very realistic.
-[Nicole] It would hurt.

Yeah. I will have to... I'll have a word
with the, uh, baking team.

[laughing]

I have two mushrooms.

Perfect. I mean, it's, like, impossible.
[chuckles]

[judges] Five, four, three, two, one!

You're done!

Hopefully mine will be edible this time.
[laughs]

All right, Josh. This is the Groundhog
Cake you were trying to make.

Let's see what you did!

-[Josh] Nailed it!
-Oh boy.

[laughs]

-[Nicole] The eyes of this groundhog!
-[laughing]

He looks terrified to see anybody.

-And he's got one little tooth.
-He was in a hole fight.

[laughs]

[Jacques] The cake is a bit short,

but we have the mushrooms,
the flowers, and the groundhog.

It looks like there's some kind of
creature that was sleeping inside of it,

and some crazy party happened.

[dance music playing]

And he's like,
"What's going on round here?

-"I was trying to sleep!"
-[laughs]

-I think this is lovely.
-Thank you.

Wheel back to your station,
because we have other cakes to see.

All right, Maddy. You're up next.

Let's see what you did.

[Maddy] Nailed it!

-Oh!
-[laughing]

[Jacques] I love the reveal!

[Nicole] I think it's, like,
very whimsically cartoonish.

-Is that his mouth?
-It's supposed to be his teeth.

[Nicole] Oh, okay.

To me, it's like a wink and a, "Ah!"

[groundhog] Ah!

[laughs]

Maybe the owl, maybe the groundhog.

[laughs]

But the cake is very smooth on the side,

and you really have mushrooms

I've ever seen in my life.

Well, I'll ask the three of you to cut us

[Maddy] Looking at how
this cake has turned out,

there is a full cake
with all of the requested features.

But Josh had a nicer groundhog than I did.

I think it's gonna be a close one
between me and him.

Ooh, I can't wait to taste

these groundhog corn-jalapeno cakes.

Josh, you are first.

-I'm so surprised.
-[Nicole] Yes.

I have the taste of the jalapeno,
and I have the corn.

The buttercream melts into it.
It's very moist.

[Nicole] Mm-hmm.

-I'm going to have a second.
-Oh! Look at that!

I'm just excited it's edible!

Actually, it's really nice.

This is kinda my kinda cake.

-And you used fresh jalapenos, right?
-Yeah.

I think that was the move.
This tasted delightful.

I think I can find some of the corn.
I don't find any jalapeno.

Yeah. You know how someone's

And I kinda want it like
full-volume jalapeno in my face.

I used the canned jalapenos
instead of the fresh ones,

so I'm guessing that's why.

But I still like it. I think it's a
really nice, light, delightful cake.

Awesome.

[Jacques] The cake is very elastic.

That type of cake,
less mixing, less elasticity.

That's what you want.

Just mix the ingredients,
put it in a pan. Done.

-Oh, yeah. I kept it going for a while.

The corniness is there, which is nice,
but I do miss the jalapeno.

I want some jalapeno action.

I also used the canned jalapenos.

But I do get a lot of corn flavor.
