Now, Tim has been in
Moonshining a long time.
It's just good liquor.
It's all smooth, and you'd go
Pay really high dollar in your
Grocery store or liquor store
For something that tasted this
Good.
And it's a whole lot stronger,
Too.
But the clock's
Ticking.
They have less than 24 hours to
Brew, proof, and jug the
Moonshine before Tim’s
Distributor arrives.
We got to hurry up and get to
Making something here.

Everybody wants some damn
Liquor.
The bootlegger, or
Runner, is a transporter
Contracted by a middle man to
Run the jugs of liquor from the
Still site to a location known
As a stash house.
What's -- you hear that

For a moonshiner,
Shutting down a still mid-run
Can be a death blow.
One still can make up to
100 grand per season.
Let's shut it down.
But Tim and tickle
Have no choice.
They shut down the still.
They need to figure out if it's
An innocent trespasser or an
Undercover agent.

Moonshine.

This nip joint has been known
For illegal sell of alcohol.
A large amount of gambling's
Been going on, some drug
Activity, but mainly gambling
And illegal sell of alcohol.
Jesse and the ABC,
Virginia's alcohol beverage
Control, have been prepping for
This for months.
Tonight's objective -- we'll
Obtain a search warrant after
The c.I.S see the illegal
Activity taking place.
Yes, sir.
Then, two
Confidential informants, or
C.I.S, were sent into the nip
Joint to purchase alcohol.
They have gone in.
They have made contact.
They've bought liquor.
So now we're gonna come back
Out, debrief them, and we'll get
A search warrant.
With the search
Warrant in hand, they can now go
Back and storm the nip joint.
We do know based on the
Under covers that have been
Inside that there are about 40
People in there, very
Intoxicated now.
There have also been reports of
Two girls getting ready to cut
Each other with a knife.
So we know there are weapons on
The inside.
We know there's drunks.
So it could get pretty violent
Pretty quick.
Man, I'm tired.

Seeing the armed man in the
Still site.

And I have no idea who the guy

Pick up the loot.

So this was a very successful
Long-term operation, and my
Hat's off to the agents that put
A lot of hard work into this
Sting.
Tim’s miles away.
He and tickle head back to the
Still site to track the armed
Man they saw the day before.

Most times, you can make a lot

It's just at nighttime, when

You're trying to run the still
Then, people can hear you then,
Because everyone is quiet.
You know, it's not planes flying
Over.
It's not traffic running up and
Down the road.
In the country, you can just
Listen and hear things that's
Not sounding right.
That's when the ears go up and
Like, "What is that?
What's going on in the woods?"
I hear a truck off to a
Distance.
Which that's okay.
That's normal.
Early in the morning, that's all
Right.
Long as it doesn't stop.
Nothing to worry about right
Now.

Proofing barrel.
So, time is getting right.
We're getting ready to put the
Fire under this thing, and we're
Gonna cook it off.
And I guess you could say it's
Like NASA getting ready to take
Off to the moon.
Let's go to work.
You don't want to turn it on too

There was a lot of gas up on

You can see it coming up.
Once the mash
Reaches 175 degrees, the alcohol
Contained inside turns to vapor.
The vapor then travels through a
Pipe to the thump keg, where the
Alcohol doubles in proof.
There, it bubbles through a
Small amount of moonshine held
At the bottom of the barrel.
The alcohol vapor then travels
Through another pipe to a coil
Of copper pipe that sits inside
A barrel of ice-cold water known
As the worm barrel.
Inside the coil, or worm, the
Alcohol condenses into the
Liquid known as moonshine.
Finally, the moonshine is
Transferred to the proofing
Barrel where it's cut with
Water and piped into jugs.
I hear a dog barking
Somewhere.
Everything is pretty distant,
Though, but any time somebody
Unusual comes up when dogs are
Barking, they know what's going
On.
After months of
Planning and weeks of building
While staying one step ahead of
The law, all of Tim and tickle's
Hard work is about to pay off.
The still has been fired up, and
The 'shine is about to start
Flowing.
The risks of moonshine in
There -- there are great risks.
You know, it's just like any
Other thing that you're gonna
Do that's...Well, not legal.
But this is what I've got to do
To help survive.
And I do it because it's
Something that I love.
And...
I mean, what can you replace
Something that you love with?
Nothing.
Get the job done.
That's what we're trying to do.
Make everybody happy.
It's like making bread.
When the time is right, that's
When we take it out.
This is the first coming out.
That's really, really, really
High stuff right there.
It's probably like 180 proof of
Stuff.
It's got just about a pure
Ethanol off the top.
One slip-up for Tim
Could be deadly.
If brewed improperly, moonshine
Can be lethal.
Moonshine has been known to pack
A deadly punch.
This is because the first few
Ounces of moonshine produced,
Known as the high end or the
Head, contain methanol, which is
A form of methanoic acid.
It is the same toxic chemical
Found in wasp stings.
If the moonshiners fail to throw
Away the head and the
Methanol-tainted moonshine is
Consumed, it can damage the
Optical nerve and cause
Blindness.
We may catch us about 5
Gallons out of there.
And we'll pitch that.
We'll get rid of that.
The middle is what we want.
You got the high end and the
Low end, so on the high end, you
Don't want that.
On the tail end, the tails, you
Don't want that.
You just want the middle cut.
You want the prime out of it.
All of it's got alcohol in it.
But you want the good stuff in
The middle.
I'm gonna switch with that jar
Right there and see what some of
That stuff looks like.
Get rid of this.
Legendary
Moonshiner popcorn Sutton had a
Special way of distilling his
'shine.

Yeehaw!
Famous for making
Potent liquor, popcorn Sutton
Was known to jug moonshine as
High as 160 proof.
One bottle of popcorn's
160-proof moonshine is equal to
Two bottles of jack daniel's
Whiskey.
Mmm!
Whew.
She cooking.
Yeah, she's cooking.
Little bit of leak right in
There.
That much --
It ain't big.
Soon as it gets hot, see,
That'll seal 'cause of the
Pressure.
Pressure push it against, and
That seal up tight.
Yeah, you see it right there?
Uh-huh.
Yeah.
It's just a little bit right in
There.
That's the only place I got
That's a little problem.
Suddenly, there's a
Leak in the copper pipe.
Tighten on there.
All right.
Do a mack out on it there.
Here, put that rubber on there
First.
That'll put a seal on it.
And then I put the tape, put
Pressure, hold it -- hold it in
There.
All right, you keep the fire
Going.
Think I'm ready to start
Catching something.
Sounds good.
All right.
When it's coming out of there,
It's money going in the bucket.
And it's going in the barrel and
Going in the jug.
And hopefully the guy shows up
To pick it up, too, you know.
'cause I don't want to get stuck
With this finished product.
'cause I don't need it.
I don't want it.
I just want the money.
I just need the money right now.
So I don't need the product.
You can see there's a little
Bit of stuff floating around in
There.
First filter didn't catch
Everything.
I might have had something in
The bucket, too.
But the next filter should catch
That.
So the first bucket, about two
Gallons in there.
So, whoo, got a long ways to go
Yet.
Tim pours the
Moonshine through another
Filter, a simple pillow case.
Once this is complete, Tim
Should have about 80 gallons of
Moonshine proofed and jugged.
Moonshine is fresh.
As soon as it comes out of the
Still, it's already cooled down
To under 75 degrees.
That's where it changed back to
Its liquid form, and it's ready.
It's not like your bourbon,
Jim beam, or anything like that.
It doesn't have to be aged or
Anything, so it's fresh.
So as soon as we proofed it
Down and we got the proof that
We want, we jug it.
It's ready right now.
And the proofing barrel is ready
To drink, right out of the
Proofing barrel.
You had your dipper in, you
Could dip you some out like
Water if you wanted to.
When you go to take a swig of
Something that's 100 proof or
Somewhere around there,
Sometimes it can take your
Breath.
To me, 100 proof is nothing.
To a whole lot of people, 100
Proof is nothing.
You can buy that in the liquor
Store.
But it don't taste this smooth
And don't taste this good.
This is what you want.
In the middle, it'll be the
Cleanest and smoothest.
Even though the
Still pot holds 800 gallons of
Mash, only 10% will end up as
Moonshine.
Looks like that tank over
There is freezing it.
But now there's
Another problem.
See, we're running this thing
With no regulator.
And normally you have a
Regulator there for, like, a gas
Grill or something.
But we're running a straight
Line.
So the stuff comes out of that's
Cold.
And what'll happen is it'll
Freeze up, and the gas won't
Come out.
The moonshiner
Practice of running propane
Tanks at full flow without a
Regulator can cause the tank's
Valve to freeze.
I notice it's slowing up a
Little bit, so that's what's
Happening.
To remedy valve
Freeze-up, some moonshiners keep
The propane tanks warm over an
Open flame.
It's a practice that's caused
Deadly still-site explosions.
So we take some of the warm
Water that's off of the worm
Over there and pour on it to
Warm it up a little bit.
That's just another -- something
You got to keep busy at.

Limited to backwoods America.
It goes all the way to the white
House.
President Franklin Delano
Roosevelt was known to drink
Moonshine with the locals while
On vacation in warm springs,
Georgia.
George Washington not only drank
'shine, he owned his own still.
And even though president
Warren g. Harding voted for
Prohibition, he had moonshine
Delivered right up to the
White house.
In just two hours, Tim’s buyer
Expects to pick up 80 gallons of
Moonshine.
After a shutdown and equipment
Trouble, Tim needs this run to
Go off without a hitch.
Guess what.
That's some high, high-octane
Stuff, 'cause we got a spider
Fell in there.

Method of determining the
Liquor's proof.
Now, you talk about some high

I'd bet you money it's 190
Proof.
Oh, yeah.
Using this method
Is an art that takes a lifetime
To master.
Well, if they come up like
That in big beads and go away
Real, real fast, that means the
Higher the proof, the faster
They go away and the bigger they
Are.
As the liquor
Leaves the still, its potency
Dilutes.
Popcorn numbers the jars
According to the potency of the
Liquor.
See, as you go backwards,
That means it's higher.
I got a number-10 jar here.
Number 9's higher than that was.
Number 8's higher than 9 was,
All the way back, see.
The whiskey'll get
Tempered or diluted to make it
Suitable for drinking.
I don't know one man that can
Temper liquor as good as I can
Or better.
See, it tastes altogether
Different once it's tempered.
Floyd, did you smell the jar of

The final step in
The process before the runner
Arrives is proofing.
Tim is using a hydrometer,
Which is a more scientific way
Of proofing.
It works by measuring the amount
Of water in the alcohol.
The more water, the lower the
Proof.
110 proof is 55% alcohol.
We need to cool it on down
To about 90, so, you know...

As I roll it up, it's hot on
The bottom.
This is the last chance you get
To stir it.
'cause when you put the cap on,
You won't get to stir it no

That thing is hot now.
That's where you want it -- good
And hot.

The alcohol vapor then travels
Through another pipe to a coil
Of copper pipe that sits inside
A barrel of ice-cold water known
As the worm barrel.
Inside the coil, or worm, the
Alcohol condenses into the
Liquid known as moonshine.
Finally, the moonshine is
Transferred to the proofing
Barrel where it's cut with
Water and piped into jugs.

Everything is pretty distant,
Though, but any time somebody
Unusual comes up when dogs are
Barking, they know what's going

After months of
Planning and weeks of building
While staying one step ahead of
The law, all of Tim and tickle's

The risks of moonshine in
There -- there are great risks.
You know, it's just like any
Other thing that you're gonna
Do that's...Well, not legal.
But this is what I've got to do
To help survive.
And I do it because it's
Something that I love.

I mean, what can you replace

Get the job done.
That's what we're trying to do.

It's probably like 180 proof of
Stuff.
It's got just about a pure
Ethanol off the top.
One slip-up for Tim
Could be deadly.
If brewed improperly, moonshine
Can be lethal.
Moonshine has been known to pack
A deadly punch.
This is because the first few
Ounces of moonshine produced,
Known as the high end or the
Head, contain methanol, which is
A form of methanoic acid.
It is the same toxic chemical
Found in wasp stings.
If the moonshiners fail to throw
Away the head and the
Methanol-tainted moonshine is
Consumed, it can damage the
Optical nerve and cause
Blindness.
We may catch us about 5
Gallons out of there.
And we'll pitch that.
We'll get rid of that.
The middle is what we want.
You got the high end and the
Low end, so on the high end, you
Don't want that.
On the tail end, the tails, you
Don't want that.
You just want the middle cut.
You want the prime out of it.
All of it's got alcohol in it.
But you want the good stuff in

As soon as it comes out of the

That's where it changed back to
Its liquid form, and it's ready.
It's not like your bourbon,
Jim beam, or anything like that.
It doesn't have to be aged or
Anything, so it's fresh.
So as soon as we proofed it
Down and we got the proof that
We want, we jug it.
It's ready right now.
And the proofing barrel is ready
To drink, right out of the
Proofing barrel.
You had your dipper in, you
Could dip you some out like
Water if you wanted to.
When you go to take a swig of
Something that's 100 proof or
Somewhere around there,
Sometimes it can take your
Breath.
To me, 100 proof is nothing.
To a whole lot of people, 100
Proof is nothing.
You can buy that in the liquor
Store.
But it don't taste this smooth
And don't taste this good.
This is what you want.
In the middle, it'll be the
Cleanest and smoothest.
Even though the
Still pot holds 800 gallons of
Mash, only 10% will end up as
Moonshine.
Looks like that tank over
There is freezing it.
But now there's
Another problem.
See, we're running this thing
With no regulator.
And normally you have a
Regulator there for, like, a gas
Grill or something.
But we're running a straight
Line.
So the stuff comes out of that's
Cold.
And what'll happen is it'll
Freeze up, and the gas won't
Come out.
The moonshiner
Practice of running propane
Tanks at full flow without a
Regulator can cause the tank's
Valve to freeze.
I notice it's slowing up a
Little bit, so that's what's
Happening.
To remedy valve
Freeze-up, some moonshiners keep
The propane tanks warm over an
Open flame.
It's a practice that's caused
Deadly still-site explosions.
So we take some of the warm
Water that's off of the worm
Over there and pour on it to
Warm it up a little bit.
That's just another -- something
You got to keep busy at.
