We want you to create a dessert
that's out of this world.

[Simon groans]

[narrator] The mission for
a stellar creation saw Simon soar.

Yes! Totally blew my mind.

My girls would be proud of their dad.

[narrator] But one dessert
came crashing back to earth.

[Kylie] Oh, no. It's just fallen off.

-[Kylie] It looked so good.
-[Jeff] Yeah.

[narrator] And Zak's epic fail
sent him home.

-Opa!
-[all] Opa!



[narrator] Coming up...

Here come my little Zumbinos.

[narrator] Kids take over
the Dessert Factory...

Hi, kids.

...and dish out some
not-so-sweet critiques.

Ew.

[theme music playing]

[birds chirping]

Wow!

It looks incredible.

I'm seeing a little table
and little toadstool chairs.

I'm thinking

maybe some little people might be
coming to the Dessert Factory today.

Ah! It's so pretty.



[Rachel] Oh, my gosh.

[Simon] What's going on?
There's, like, a garden in here.

[Kristie] It looks like
it's either a birthday party

for elves, or fairies,
or maybe even children.

-[Rachel Khoo] Hi, dessert makers.
-[contestants] Hi.

[Khoo] You've all made it to
the halfway mark of the competition.

Well, no points for guessing what
we've got planned for you today, right?

-Well, who doesn't love a kids' party?
-Oh, yes.

I love kids' parties,
and I love making kids' party cakes.

This is right up my alley.

Curious creatures,
magical lands and forest fairy-tales.

That'll be your inspiration
for a fantastical dessert.

So, today's Sweet Sensations Task,

we want you to create
an enchanted kids' party cake.

Whoa.

-[Simon] Wow.
-Yay.

[both chuckle nervously]

Who better to judge a cake
than kids themselves?

Oh, wow.

Okay. [chuckles nervously]

I feel so nervous knowing there are
going to be kids here judging today

because if they don't like it,
they're just gonna say it.

They'll be here soon to help us decide
who's the best and who's the worst.

[Khoo] As always, the two dessert makers

with the weakest creations
will head straight into the Zumbo Test,

where a brand-new Zumbo creation awaits.

The dessert maker with
the weakest creation will be eliminated.

[Kristie] I definitely do not want to be
in the Zumbo Test.

I've had my turn.
Someone else can have a go. [laughs]

Okay, guys.
Head to your benches.

Time to power-up your dessert stations.

You have three-and-a-half hours
on the Factory Clock.

Your time starts now.

[Rachel] Okay, let's get some color.

Lemons.

I need a lot of sugar in this cake.
I mean, a lot of sugar.

Yeah, it wasn't that long ago
that I was a kid.

I guess I still am a kid, kind of.
[chuckles]

For this Sweet Sensation Task, I'm gonna
be making a fantasy tree stump.

It's going to be a chocolate sponge,
a strawberry mousse and hazelnut ganache.

My cake is Alice in Wonderland-themed.
It'll have a rabbit tail and playing card.

The first thing that I need to do
is make the cake layers for my tree stump.

To make this cake batter,
I get all my ingredients

in the mixing bowl.

I've never made a kids' party cake before,
'cause I don't have kids.

I'm 19 years old, and the youngest
dessert maker in this competition.

Inside, I'm still a kid.

So, I can just do what I want,
and it'll be perfect.

[laughs heartily]

-What are you making?
-Um, I'm making a secret garden cake.

Oh.

[Kylie] I'm creating a secret garden cake,

which is a strawberry cake,
a lemon and vanilla cake,

strawberry jam and a vanilla buttercream.

The story behind this cake
is walking into the forest

and you find this beautiful tree stump
with this door.

When you turn the cake around,

you see that the door
leads to the secret fairy garden.

-How 'bout you?
-I'm making a tree stump cake.

-Oh, cool. Very similar.
-Mmm-hmm.

Kylie's making a tree stump, too.
[chuckles]

Hearing that, it gives me
more determination to win.

[Kylie] Catherine's doing a tree stump.
I'm doing a tree stump.

So, today, we have
a battle of the tree stumps.

Battle of the ages today, Catherine.

[both laugh]

I've made plenty of cakes in the past,
so let's just see how she goes

against my tree stump.

I did win Dessert of the Day on a cake.

Um, and I think it was
because it did look quite spectacular.

Um, I'm hoping they think that
about today's cake as well.

I'm feeling really comfortable
going into this task today,

as I have made a lot of kids' cakes.

So, I'm hoping that
I'm going to win Dessert of the Day today.

And we have a double-yolker,
which is good luck. Whoo-hoo.

[chuckles]

I pop the batters into tins
and into the oven.

It's looking beautiful, light and fluffy.

[grunts]

I'm turning into the Hulk, man. Yes.
Unleash the Hulk.

[Simon] For this Sweet Sensation Task,

I'm making castle cake
on top of the beanstalk.

Winning that Dessert of the Day
has really, um, shown

that I can stand up against these guys.

My kids will love this.

I've got to sculpture this beanstalk.

The only way to do that
is with modeling chocolate.

It's almost like being in preschool,
making Play-Doh.

[chuckles]

-[Zumbo] Hey, Simon.
-Hey, mate.

-Working that modeling chocolate, eh?
-Yeah, yeah. This is, uh...

-[Zumbo] Tough work, isn't it?
-It is.

[Zumbo] What kind of cake you making?

-[Simon] Um, orange and almond.
-Yeah, nice.

But I'm gonna jazz it up
with some Pop Rocks in it.

How are you doing that?
Like, where are you gonna put 'em?

I'm gonna actually put it in my layers
because I'm gonna layer the cakes.

-So, in the cream cheese?
-In the cream cheese.

What happens to Pop Rocks
when they touch...

-Moisture.
-Yeah.

It starts to react.

Hmm. Yeah, so...

I need to think about my Pop Rocks.

How am I gonna cover these Pop Rocks
and keep them from not popping?

I'm making just a vanilla bean cake,

'cause I've got kids,
and I know how they roll.

Being a mum of four,

I've made some birthday cakes
in my time, so... I'm feeling really good.

Like, I'm feeling this is my forte.
I'm at home with this.

So, hopefully,
this should hit the sweet spot.

We are making a recreation of, um,

Charlie and the Chocolate Factory
chocolate room.

For this Sweet Sensation Task,
I'm creating the chocolate room

with a vanilla cake,

a vanilla buttercream,
and a passion fruit curd.

So, just crackin' on with the cake.

Lots of vanilla bean.

Eggs, flour. Lots of sugar.

I need a lot of icing sugar in my cake.

Oh, just about two kilos.

Two kilos of sugar is about
the same weight as a newborn baby.

Yeah, that's all icing sugar.

Two kilos is a lot of sugar.

Some of it is for the layers, of course,
and to coat the outside of the cake.

But some of it's also for the decoration.

This kind of cake
with this amount of sugar

is always a winner at kids' parties.

It's a one-stop celebration.

So, we're gonna do it with a lot of sugar.

What kid doesn't love sugar?

I'm trying to stay away
from the icing thing.

Icing is just everywhere. Kids actually
don't actually like a lot of icing.

And it's kind of easy to fall in the trap
with just doing a whole cake in icing.

I know flavors for kids.

Kids don't like sugar.

Kids like natural flavors, natural colors.

My kids would love this.

Let's try something different.

For this Sweet Sensation Task,
I'm creating an end of the rainbow cake.

It's beetroot and raspberry red velvet,
with pistachio moss

and a dark chocolate ganache
on the outside.

We're gonna make a little grassy mound.

At the top of the cake,
there's gonna be a rainbow,

which really, kind of,
indicates to this little hidden cave

down the bottom with the gems in it.

I'm doing the cake first
because I need time for it to cool.

To make the red velvet cake,
I blitz up the oil and the beetroot.

Let's get that party started.

And then I'm going to aerate the egg,
fold that through with the flour

to make the base of the cake.

Sort of fold these two in together.

And this can go in the oven.

Getting beetroot in there is a great way

to make red velvet
without pouring lots of coloring in.

Beautiful. Lovely red velvet color.

I love the fact that
it's got natural ingredients

and flavorings in it.

Okay. Into the oven.

[Catherine] I've made
my strawberry mousse,

and I'm just gonna put it to the side
until I need it.

I then start making my ganache.

[grunts]

I need to whisk it
until I get it to a nice and smooth,

spreadable consistency.

Ganache, if you overwhip it, it'll curdle.
It could become chocolate butter.

Mmm.

It's kind of split.

You can't really salvage split cream.

[groans]

I kind of have to remake it.
I can't have split ganache.

Oh.

Because I have ganache in the cake,

having that setting in the cake
is going to take a lot of time.

And so, if you don't get the setting,
the cake's gonna collapse.

I gotta work very fast.

Ugh.

I can definitely
feel myself starting to rush.

Whoa.

The rate that I'm going,

I don't know
if I'm gonna really have a cake.

In a bit of trouble.

[exclaims]

Enchanted kids' cakes.

I think
we should be in for a treat today.

I really wanna look for something
fresh, tasty...

The imagination needs to run wild,
and, you know,

nothing like a great smile on a kid's face

when they're just taken by
someone else's creation.

Mmm. You want their eyes to light up

-don't you?
-Yeah.

I don't want to get any "yuckies" today,

I just wanna get, "Mmm, yum, I love it."
[chuckles nervously]

Today, I'm creating a rainbow hedgiehog.

It's a rainbow cake
with buttercream and passion fruit curd.

This rainbow hedgiehog has a big,
swollen tummy full of chocolate drops.

You have to crack it open
and help him eat them.

It won't have a bow, though.

Maybe I should've done a bow.

Next thing I'm gonna do

is, um, get my cakes out of the pan,
get them cool, layer it up.

Cover the whole thing in buttercream.

And then I'm gonna temper my chocolate
for my hedgehog belly.

And you leave it to set
in your little template or whatever.

It'll be a perfect snap.

It is really important that
the presentation is spot on today.

The kids wanna eat the cake
that looks the best.

All right. Set.

I'mma watch you now.

I've remade my ganache,
and it looks pretty good,

but I've lost a lot of valuable time.

Yeah, no splitness.

Because Kylie is doing a tree stump.

So, I really gotta just
make this cake special.

It can't just be a tree stump.

So, I wanna layer my cake,
uh, with four layers.

I put on the hazelnut ganache,
and another layer of chocolate cake.

And then, on top of that,
I can pour the strawberry mousse.

Looks very liquidy.

So, I'm a bit worried about
the strawberry mousse setting in time.

If you don't get the setting,
the cake's gonna collapse.

So, I just put the strawberry mousse
back into the blast chiller

to let it, you know, really firm up.

I'm watching you, Catherine.

Catherine is my biggest threat.

Let's just see
how she goes against my tree stump.

[laughs]

My cakes are done, and now it's time
to finish my strawberry jam.

I just tasted it. And, yeah,
strawberries are beautiful.

My jam's done.
It's in the fridge cooling down.

Now, I have so much buttercream
to make for this cake.

I have two different types of buttercream
on this cake.

I have a dark chocolate buttercream,

which will form the bark
for the tree side of my cake.

And then the vanilla buttercream

will be colored into lots of different,
beautiful, bright colors,

and piped in different ways
to create the fairy garden.

We've got green, we've got blue,
we've got pink.

My biggest competition,
I think, is going to be Kylie.

She's gonna bring up an amazing cake.

[chuckles] It's the Pop Rocks.

I need these Pop Rocks to work
because I wanna make it fun for the kids.

So, I'm gonna melt some chocolate,
pour that over my Pop Rocks...

Oh, wow. There's a party happening
in my mouth.

Covering the Pop Rocks
with white chocolate really saved the pop.

Dude, it's still going, eh?
It's just popping in there.

Pop, pop, pop, pop.

I'm goin' good.
You know, I'm winning at this stage.

I've got my cakes cooling down.
My buttercream's done.

I'm now cracking on to
my passion fruit curd.

I am whisking some sugar and egg yolks.

And then I'm gonna pop in
some real passion fruit in there.

I'm using two kilos of sugar in my cake.

I'm really relying on the passion fruit
to cut through the sweetness.

My kids are all over passion fruit,
so it's a winner.

My cake is ready to go.
I need to move on to my decorations.

I think, um, taste,

you know, if something's too artificial,
it doesn't... it's not as appealing.

I've finished my beetroot red velvet cake.

Now, I'm gonna move onto the ganache.

Hot cream onto the chocolate.

For my children's cake,

I'm using a dark chocolate ganache
because it has a bit of flavor,

and that'll hopefully balance out
some of the sweetness.

And I'm gonna use the ganache

to hold on that moss crumb
that I'm making to put on it.

For the moss,
I'm making just a basic biscuit.

I'm adding some pistachios
because they're a lovely green color.

And a nice pistachio flavor as well.

I know my kids liked pistachios
when they were little.

Lovely moss-looking color.

[Simon] So, I gotta decorate the cake now.

I really wanna make this castle
look realistic.

These kids,
they eat with their eyes.

So, you gotta make it look good.

To be the Dessert of the Day...

Man, two in a row, I'd like to do that.

I've come in to this task knowing I got
these skills that I'm comfortable with.

Yeah. Who would've known,
being a concreter,

I'd have to use that type of skill.

I forgot the measurement.
See, measure twice, and cut once.

See. Just like at work.

[Kristie] So, I'm going to
start layering my cake.

[Jeff] So, the ganache is going on.

It's starting to really come together now.

[Catherine] Now, I finished
layering my cake with strawberry mousse

and chocolate ganache,

I'm gonna start icing
the outside of my cake.

I really need
the strawberry mousse to be set.

Otherwise, this cake could fall apart.

It's definitely squishy.

At least it can hold its shape.
That's all we need right now.

It looks set.
It looks good. It worked.

[gasps]

The strawberry mousse is not set.

Um... This is a disaster.

How much time do I have?

[Catherine groans]

Let's just get this off.

So, I gotta improvise.

So, I'm just gonna use
the hazelnut ganache for this layer.

I have more hazelnut ganache there,
so I might as well use it.

I'm a little bit worried that, you know,
it's not going to be perfect.

I'm a perfectionist.
I like things perfect.

I definitely wanted more time
for decoration.

[Zumbo] Dessert makers,
you have ten minutes left.

Now, I'm freaking out,
'cause it doesn't have a face.

It doesn't have an identity.

And the clock is ticking,

I'm getting worried
that I'm not gonna get it all done.

Panic... It's my panic song.
[vocalizes]

I really need to think about
trying to pull this all together,

and how I'm gonna do that.

[Simon] Feeling real nervous now.

Trying to cut some windows out,
making these doors.

I've got to step it up a gear.

Five minutes to go.
Just five minutes.

[Catherine] Gotta be quick.

I'm really worried I'm not going to get it
how I want it to look.

[Kylie] I look over
at Catherine's little stump,

and I think I might have her
on this one. [chuckles]

So, I've got two colors here.

At the top of the cake,
there's gonna be a rainbow.

This rainbow is really important
for this cake to look good.

Oh. [sighs] Just making a mess.

My rainbow's not working.
The lines aren't defined.

The colors are kind of
running over each other.

I'm not happy with it at all.

Here we go, guys. Final minute.
Quick, quick, quick.

[Simon] I'm frantically
throwing jelly beans on the cake.

Like, I should've done them earlier.

[Kylie] I am shaking.
I want this win so badly.

[Rachel] Oh, no.
His tummy is, like, bursting.

[sighs] It's all good.

I've made what I had in my head,
so I'm pretty happy with that.

[Jeff] The rainbow, it's falling apart.

It's not what I wanted to happen, is it?

[both] Ten, nine, eight, seven, six,

five, four, three...

-[Jeff] I'm gonna leave it off.
-...two, one...

-That's it, guys.
-[steam whistle blows]

-Well done. Yay.
-Phew.

[judges applauding]

[Jeff] Looking around the room,

I'm starting to think these kids
could just hang me out to dry.

You were tasked with making
an enchanted kids' party cake.

And now it's time
to bring in our special guests.

[softly] Oh, so scared.

No way.

They are going to be brutal, man.
Like, kids have no filter.

-Are you ready?
-[contestants chuckle nervously]

Here come my little Zumbinos.

[kids laughing]

[child squeals]

I see the Zumbinos come in, and they seem
very happy to have lots of cake.

[Rachel] Oh, my gosh.

Hi, kids.
Thanks for coming to our party.

Are you all impressed by the cakes
in front of you, kids?

[kids] Yes.

I think this is gonna be
a really tough competition

because all of these cakes
look amazing.

And I really hope to see
some big things today.

[Khoo] Oh, wow.
Did you hear that, dessert makers?

-I'm out of a job.
-The pressure's on.

[all laughing]

[Kristie] Kids are brutal.

They're just gonna say it
straight off the hip.

There's no holding back.

Okay, dessert makers.
This is strictly kids' business.

So, please take a seat
while we taste your creations.

-[kid] Good luck.
-[Khoo] Aw!

Okay, everyone.
We're gonna try Kristie's chocolate room.

[Kristie] This kind of cake with this
amount of sugar is always a winner.

I'm pretty confident.

[whispers] I don't really like the inside.

Buttercream for me was way too sweet.
Wanted more passion fruit.

I think it needed, like,
a nice layer through it.

You know, just to cut all that sugar.

Too sugary.

I didn't actually taste the passion fruit.

[groans] I just didn't want
to hear the words "too sweet" at all.

Yeah, not good.

Okay, everyone. We're gonna try
Catherine's fantasy tree stump.

[Catherine] I didn't get all the layers
in the cake that I wanted to.

So, I'm not sure
if the kids are still gonna like it.

I don't think I've done enough to,
you know, be out of the bottom two.

[Khoo] All right.

-Is everybody ready to try the cake?
-Yup.

-[kid 1] Yes.
-[Khoo] Yeah?

-You all got a piece?
-[kid 2] Yup.

-Ready to tuck.
-All right. Tuck in.

-[kid 1] Chocolate...
-[kid 2] It was really, like, delicious.

This is a cake I really enjoy

-because it's not too sweet.
-[Zumbo] Exactly.

But...

whether it's every kid's cup of tea?

I love the hidden strawberries in it.

Lachlan, well,
what do you think of the cake?

I didn't really like the cake
because I couldn't taste the flavor.

And I just found it like normal cake.

[Catherine] This is definitely
not the reaction I was hoping for.

Well done, kids.
We're gonna try another cake now.

Yay!

[Zumbo] This is Kylie's secret garden.

It's strawberry and vanilla lemon cake
with buttercream and strawberry jam.

[Kylie] It's everything I wanted it to be.

It's something I've created
from top to bottom,

and that really excites me.

-[kid 1] Mmm.
-[kid 2] Yes.

-[kid 3] Like it?
-[kid 4] Mmm.

[kid 5] Mmm.

[kid 6] So much beautiful layers.

The sponge, really light, fluffy.

And, the decoration's really fun.

Oh, it's a great cake.

I think it's really good.
I love the pink layers.

And I think it's my favorite, so far.

Oh, bless. Oh, thank you.

Okay. Let's try
Jeff's end of the rainbow cake.

[Jeff] I think the flavors inside
are good

and I'm hoping that that's enough
to win the kids over.

I'm not sure whether the flavors
really spoke to the children.

-[Zumbo] Hmm.
-[Khoo] That beetroot and dark chocolate,

they're quite sophisticated
and they're quite bitter.

That's not something kids normally enjoy.

[gags]

Ew.

It's too strong.

I think he could've put in
a bit more work

because it doesn't taste very good.

I didn't really like the dark chocolate.

[Jeff] It's been a while
since I've made a kids' cake.

My kids are all grown up.

Oh, well...

He doesn't know what he's talking about.
[chuckles]

Now, we're going to try
Rachel's rainbow hedgiehog cake.

[Rachel] I've really done my best today,
and I'm really proud of my cake.

The kids wanna eat
the one that looks the best.

[Khoo gasps] Ooh.

[Zumbo] Oh, ho-ho.
Look what's in the tummy.

-[kids chatting excitedly]
-Oh!

[Zumbo] Magical beans.

The color inside is so cool.

Oh! [chuckles]

Yes, the kids loved the tummy surprise.
I knew they would.

[kids chatting excitedly]

[Khoo] Mmm. Dig in.

I like the whole imagination,
especially for kids.

[Khoo] It's good fun.

Um, I didn't really like
the taste very much,

but it looked amazing from the outside.

Flavors, not so sure about them.

[Zumbo] Yes. That needs a bit of work.

So, now we're gonna try

Simon's castle cake
at the top of the beanstalk.

[kids] Yay!

Hallelujah!

[Simon] I'm really
feeling proud of myself.

It is the most epic thing I've ever made.

I really hope that
the kids love the Pop Rocks.

[Khoo] The look of the cake is fantastic.

I mean, really captured
that Jack and the Beanstalk story.

[Zumbo] Well, the cake's nice.
Got a good flavor.

Now, the popping candy,

you know, has a little bit
of excitement inside, you know?

Yum.

I think I liked
the popping candy at the top.

It looked incredible and tasted delicious.

It's looking promising. I could really
win this. You know, like, far out.

Okay, kids.

Oh, yes.

And most of you got the thumbs-up.

But one of you made a cake
that ticked all the boxes.

At the end of the day,
it's what the kids like.

The Dessert of the Day goes to...

-[chuckles]

Wow. I'm pretty stoked. [chuckles]

Simon, your cake was gravity defying
and it really wowed the kids.

Flavors were good.

Your lemon cream cheese icing
made a fresh citrus note on the cake.

Feel like crying. [chuckles]

You know, I'm feeling so proud of myself.

I think I've painted a target
on my back now. [chuckles]

[Jeff] Initially, I thought
Catherine was the one to watch.

But Simon's just coming into something
that's, you know, really incredible.

And he's the one to watch.
He's my biggest competition.

Sadly, two of you gave us desserts
that didn't go down well at the party.

The first dessert maker
in the Zumbo Test is...

Jeff.

Yep.

Jeff, unfortunately, you missed the mark
in terms of flavors.

It needed a bit more sweetness.

[Zumbo] Your dessert today, I thought

the balance of flavors and the intensity,
I think, you know, obviously,

uh, needs to be a little bit lighter,
and a little bit more,

uh, kid- and adult-friendly

-across the board there.
-Yep.

Now, the contestant joining Jeff
in the Zumbo Test is...

[Catherine] I'm feeling really nervous.

...Kristie.

-[all exclaim]
-Oh.

[sighs]

Kristie, it was just off-balance.

[Zumbo] It was just too sweet.

Not enough curd
and that buttercream was just too sugary.

[Kristie] Ugh, I just wanna
grab hold of myself and just say,

"Get it right. Get it right."

But it's too late now.
I've gotta go into war again, so...

Time to get my armor on,
and do it all over again.

Okay. The rest of you are safe.

[Jeff] Kristie is a tough opponent.

But I've managed
to avoid Zumbo challenges

because I've done some great desserts.

I've gotta have some ability in me,
so I'm gonna bring that to this challenge.

Kristie and Jeff, it's time to tackle
one of Zumbo's original masterpieces

in the Zumbo Test.

What do we have this time?

I wanted to create a dessert
that's full of color,

and might even be
good for you.

[Kristie] As Zumbo lifts this dome,
all I can see is smoke.

And then suddenly, there she is.

[Khoo] I wish I had eyelashes like that.

-[Simon] Aww. Wow.
-[Khoo chuckles]

This is Fruitina, the fruit goddess,
and she'll need some special attention.

This was not what I was expecting.
It's like a cartoon character.

Looking at Fruitina,

I think this is going to be a challenge
because it's essentially

a sphere standing upright.

So, this dessert, uh,
is all based on fruit.

And it sits on a granola and yogurt base.

And then we have, like, a peach glaze.

And then, obviously,
the fresh-fruit headband.

And then, all the little
chocolate decorations,

like the grass strand hair,
and then the eyes.

The mouth out of chocolate,

and the eyelashes
are all out of chocolate.

The detail on Fruitina
is just mind-blowing.

I just don't know
how we're going to achieve all this.

You got a pink grapefruit
diplomat cream.

We have a compressed watermelon,

compressed mango,
and a green tea

-and matcha and pistachio sponge.
-[Jeff] Nice.

Looking at some of the elements,

I've got the most experience
out of anyone here,

so I'm definitely gonna
put that to good use.

I've been in two Zumbo Tests already.

This one looks like one of
the most difficult Zumbo Tests to date.

It's my first Zumbo Test. I'm excited.

The challenge is going to be
in the detail.

I need to just pace myself and, uh,
work consistently, not make any mistakes.

I've got three hours
to recreate Zumbo's Fruitina.

I've got one eye on Fruitina,
and the other eye on Kristie.

First, I'm gonna crack on
with the matcha pistachio sponge.

Get that in the oven.

Matcha is a unique green tea powder.

And, um, the afternote
is a little bit of bitterness.

We got some buttermilk.

It's gotta cool before we can set it
into the whole mousse.

Okay, that looks fairly even
and into the oven.

Kristie's gonna be very tough to beat.
She really gets in the zone.

This could be Kristie's
Zumbo Test hat trick.

But not if I can help it.

[Zumbo] This dessert's all about
fruit, kids, fun.

We wanna have, you know, that bit of pop,
that bit of zing, that bit of tang.

Yeah, totally.

It's great to show the dessert makers that

-you can use fruit in a different way.
-Yeah.

[Jeff] I've finished my sponge.
I've got my fruit cut up nice and neatly.

And then compress them
to concentrate the flavors.

I'm now moving onto
the pink grapefruit diplomat cream.

So, I'm going in
with pink grapefruit juice.

This is the basis of it.

Diplomat cream is a pastry cream base.
It's crème légère or light cream.

You wanna whip it up,
and get it nice and light

and then fold in the cream.

I'm just folding in the cream,

bits at a time just to make sure
I don't knock the air out of the cream.

I want it just to be as light as possible.

This diplomat cream is what holds
the whole dessert together.

And so it's vital that I get that made
and cooled down, so I can assemble it.

A good sponge has gone to plan
in the Dessert Factory.

I have these two molds
that I need to fill,

join together to create a perfect sphere,
which will create Fruitina's head.

The majority of Fruitina is this
grapefruit diplomat cream.

So, it's very important
that it's made to the right texture,

it's molded properly within the layers,

and then, it's completely hardened
in the blast chiller.

Without the diplomat cream,
there's no Fruitina.

The diplomat cream
looks really nice and light.

I'm happy with that.

Now, I've got to get in another layer
of fruit and sponge,

so I'm just trying to give it
the love that it needs.

I just don't seem to be
having enough of it.

I'm layering up my desserts,
and I'm getting up to the top

and I'm noticing that, um,
I don't have enough cream.

She's runnin' out of that crème diplomat.

The question is how are these two domes
going to go together

when they're not full?

[Kristie] I can't believe this,
I've run out of diplomat cream.

I'm worried about my layers.
I really want them full,

so I'm gonna whip up another batch.

[Jeff] So far, so good.
Uh, things are going really well.

But the real challenge lies ahead.

I put my molds for the sphere
into the blast chiller,

and I move onto the decorations.

Yeah, that looks heaps better.

I've done my second batch
of diplomat cream.

Now, it's time
to assemble the head in the mold.

I don't wanna waste any little drop now.

Hopefully, that is disaster averted.

[all whooping]

Yeah, you got it.

My cake is ready to go.
I need to move onto my decorations.

Just got to move quickly.

It's time to move onto the eyelashes.

These are going to be really fiddly,
and, uh,

gonna be really hard to get
nice and neat and tidy.

[Kristie] My chocolate's tempered.

And now I need to pour it over this log
to make the eyelashes.

They were fairly thin. So, hopefully,
they come off the pole.

-Where you at, Jeff?
-[Jeff] Trying to do eyelashes.

Not very good at makeup.

This is a neck-and-neck race.
We are quite evenly matched.

[Kristie] I've put my eyelashes
in the freezer.

I'm ready to assemble.

-[Zumbo] Thirty minutes left.
-[contestants cheering]

You can do this.

[Kristie] I take the molds
out of the freezer,

and I am absolutely praying
they're completely set.

Please, just let it work.

Please, like now, of all times,
make the stars align and something happen.

Yup, it's good.

-[Catherine] Yes.
-[contestants cheering]

Oh, my gosh.

[Jeff] I'm starting to assemble
this fruit goddess.

I'm so relieved.

It's just such a nice sphere.
It set really well.

And it's gonna take the glaze
really nicely.

[Kristie] Yeah, it's a pretty color.

I add the color to my glaze,
and then I want to stick-blend it up

and that's what essentially makes it
all nice and smooth.

The slightest imperfection
in this glaze is so visible.

So, we can't stuff this up.

So, on with the glaze.

Yeah, it looks lovely.

I'm just gonna make sure
I can put an even coat.

And I can, um, blast chill it
for a second, just to set that up.

Pouring the glaze on,
and it just looks perfect.

You got to get it round the...

-Come a little round the front.
-[Rachel] What's he doing?

-It's got gaps.
-[Simon] No, he didn't see it.

I've missed a little bit,
coming round the side.

You only have ten minutes left,
dessert makers. Come on.

[all cheering]

[Kristie] The plan is to hurry up and
glaze it and just pop it back in there.

[Simon] It's not looking good for Kristie.

It looks like scrambled eggs. [sighs]

[Kristie] I've left my glaze
out on the bench for too long,

and now it's starting to set.

And it's...
[sighs] It's just gone all chunky.

Uh, it's a little bit thick
but I've just gotta get it on.

I just have to roll with the punches
at this stage,

and just slap it on there.

Oh, looks like
Kristie's having an issue as well.

I look over at Kristie.
It's not happening for her.

This could be the advantage that I need.

Yeah, I'm happy with this.

[Zumbo] Five minutes to go.

[Kristie] Five minutes to go
and I just wanna start loading her up.

I want her lips on.
I want her eyes popping out.

Um, the headband, the grass
coming out, that's all looking good.

And then, I have to deal
with these eyelashes.

These are ridiculous.

-There's only one minute left, guys.
-[all cheering]

[Kristie] I'm trying to put these little,
delicate eyelashes onto Fruitina.

Oh, shoot. It's falling.
It's falling, falling.

I see it fall and I'm panicking.

I grab hold of it,
but that ruins the glaze.

-Oh!
-[Simon] Oh, wow.

And I just grab some pineapple

to shove under it
to stop it rolling over any more.

[both] Ten, nine, eight,
seven, six, five...

Oh, another one.

...four, three, two, one...

[contestants cheering and applauding]

-[Catherine] Good job.
-[Simon] Well done.

[Kylie] Good job.

There's no way that I can win now.

It's really disappointing.

It's gut-wrenching for the last second,
for it to roll over and fall forward.

Uh, but, um...

Yeah.

I've just gotta...

hope for the best.

Kristie and Jeff,
can you please bring up your desserts?

[Jeff] I see Kristie's Fruitina.

Her glaze is not perfect.
There's missing eyelashes.

And I'm hoping that's enough
just to pull me through.

[Kristie sighs] Seeing Jeff's on the lean,
I might be in for a chance.

Jeff, we'll start with yours.

[Jeff] I'm nervous.
This is such a huge moment.

I don't know what they're thinking.

You know,
I know that it's gonna be close.

And I don't know
which way it's gonna fall.

Kristie, it's time
to taste your dessert.

[Kristie] I really wanna hear
Rachel and Zumbo say,

"The flavors are amazing, on point."

And that's enough to pull me through
her lumpy and bumpiness.

Kristie and Jeff, today you recreated
Zumbo's Fruitina goddess.

A dessert filled with
flavor, fun and fruit.

It's now time to critique your desserts
and score them out of ten.

Kristie.

Your structure of your cake
was really well done.

Unfortunately, I saw that
you had some problems

-with your diplomat cream.
-Yeah.

Which meant the texture

was a little bit rubbery,
a little bit dense.

It didn't have that light fluffiness,
so that was unfortunate

because that really kinda set things
a little bit off.

Yeah, of course. Yep.

You made great sponge, great crunch.
Fruit was awesome.

-But that diplomat cream...
-Yup.

...didn't have that nice, light,
airy texture, you know?

Yeah.

The glaze on the outside
was quite thick and rubbery.

Inside showed a lot of heart...

-Yeah. [chuckles]
-...but the outside was just a bit messy.

Yup.

[Jeff] She may have outdone me.

I do know it's gonna be really close.

Jeff.

You had a really good, finished product.

I think you didn't put the actual sphere
on your granola base properly.

Because that little mistake
defected the presentation.

The glaze wasn't perfect.

It didn't have that smooth finish
we were looking for.

But, tasting your cake,
you really nailed the diplomat cream.

Jeff.

The finishing touches were nice.
I think I loved your eyelashes.

I loved the headband.

You had a good glaze, at first.

And then, it got
a bit patchy in the end, obviously.

But, overall, you had some
great elements inside,

but you had some other elements
that weren't quite right.

Jeff, for your dessert, I'm giving you...

but I really don't know
