during our food truck boot camp.

First, branding.

I want you to look back

and pick five dishes
that really define your brand.

Your best five dishes.

You will write down
your five dishes

on the menu boards
I provided you.

Those are the only five items
that you'll sell

at your final destination.

And for the first time,
I'm setting your price point ‐‐

one $5 dish, three $10 dishes,
and one $15 dish.

I don't like Tyler
setting the prices for us.

I like to go to the town,
feel the town,

see how much I can charge.

The only thing
that makes me glad

is that he's setting the prices
for Texas, too.

Once you're happy
with your menus,

you will drive 150 miles south
to Bonita Springs, Florida,

where we'll focus on marketing.

There, you will record
a 30‐second commercial

for your food truck.

I will make sure
that it hits the air

at our final destination.

It's a manmade island
only accessible by airboat.

When you get there,
find the Captain.

He will give you a package.

You will use

to create an epic dish worthy
of this amazing ecosystem.

When I see all the fresh produce

it brings me back
to a comfort zone,

'cause frog legs
and alligator meat,

you get thrown off,

but then when you see products
that we actually know,

right back on track again.

So, girls, there wasn't that

is freakin' huge.

I've never cooked alligator
or frog legs,

so I'm just gonna treat it
