Jam-filled animal pastries and a coffeecake shaped like a sloth push the contestants out of their comfort zones--and the results are wild.

Welcome to the jungle.

I'm Nicole Byer, your guide
through the wilds of Nailed It!,

a show searching for a majestic waterfall,

but ends up finding a lake of piranhas.

On this hair-raising episode,
three amateur bakers

will attempt to recreate
spectacular professional desserts

for a chance to win $10,000.

Let's meet these adventure-seekers!

I'm Larry Nelson, I'm 60,

and I'm an IT program manager.

My wife and I met online.



Don't know why she picked me,

but 20 years later,
it's still going strong.

[woman] I think you're missing something
on your mixer, maybe?

What's underneath your flour?

Baking has been something I've tried to do

to show that I love and care about her,
'cause she does a lot for me.

My wife got me a good luck charm.

I call him Frodo,
and I'm excited that he's here.

My name is Glennia Elijah,

and I started really baking

when I had my daughter, Eden,

for her birthday parties
and stuff like that.

She started giving me criticism

as soon as she could talk. [laughs]



I said, "Okay, well,

eat it anyway." [laughs]

My name is Shelisa Schmidt.
I'm 27 years old.

I've been teaching for three years.

If I had to pick between baking
and decorating the actual cake,

then I definitely would pick
the decorating

even though I'm not the best
at that, either.

Husband just got home.

He says it doesn't look good.

Hopefully, by being an art teacher,
that I bring in my creativeness.

And I'm here to nail it. 

Welcome. Are you excited to be here?

Bakers, Nailed It! has gone wild.

And in just a moment,
you will venture deep into the jungle.

Joining us is the Tarzan of chocolate,
Jacques Torres.

[imitates Tarzan yell]

Oh, Jacques! You beast!

And next to me is author, baker,
and YouTuber,

and college student, Rachel Fong!

Hi. It's an honor to be here.
Thanks so much for having me.

Bakers, this first challenge is called
Baker's Choice.

Behind that door, we have the biggest,

the deadliest, and the tastiest
animals in the jungle.

You'll wanna remain at a safe distance
when you make these...

jungle pastries!

[growling and animal calls]

We have a dangerous hippopotamus,
a deadly crocodile,

and a magnificent elephant.

These realistic wild animals
are made out of modeling chocolate

and painted with cocoa butter.

Each one is on top
of a jam-filled toaster pastry,

which, guess what?
You're gonna have to make from scratch!

When I say, "Charge,"

you will carefully approach the door,

and choose the jungle pastry
you want to make.

Charge!

Hilarious.

Give me that...
Larry was listening too hard.

[Glennia] I wanted the hippo!

[Nicole] All right. Well, good luck.

I wish you the best.
This is gonna be hard.

I can't wait to see what you make,
but I think you should start now.

-[klaxon sounds]
-[Nicole] Wait, I'll get your little dog.

[Larry] Thanks, Nicole. [chuckles]

It's not turning on.

Jacques, how would you go about making
these toaster pastry

wild animal extravaganzas?

That's actually pretty difficult.

First, make the pastry dough, roll it out,

and cut into the shape of the pastry.

Sandwich jam between the two thin layers
of dough and bake.

Then, sculpt the wild animal
and make royal icing.

When the pastry is cool,
decorate with royal icing for water,

and use fondant for finishing touches.

Welcome to the jungle.

-It's a lot.
-That's a lot.

So, cold butter mix...

Cold butter? Really, though?

Right. That's gonna be hard.

Lock it.

Oh, it's not nice.
It's fighting with the butter.

Sometimes they put the speed way too fast
and they start it.

-Yeah.
-And you see all the flour

and everything "poof."

-Kind of exciting.
-I think so.

[Glennia] Oh, God.

[Larry] Wet before dry, wet before dry.

When it comes to multitasking,
sometimes I'm good,

and sometimes,
it's not a good thing to watch.

Wet before dry, wet before dry.

[Jacques] Larry just put
his wet ingredients in the mixer.

He's mixing everything together,

so his dough will be very crumbly.
Let's see if he can roll it.

Something didn't combine
like it should have.

Hey, Lar-Lar!

How's it going over there-there?

I'm having a problem,
but I'm gonna figure it out.

Is your dog giving you good vibes?

-[Larry] He's supposed to.
-[woof]

There we go.

I'm gonna add a little bit of cream to it,

see what happens.

Now, that's... That's doughy.

[Larry] Yay for me.

Four egg yolks? That's just four eggs?

I always tell my students,

"Keep going, no matter what,
and fix it as you go."

But sometimes,
I can get pretty distracted.

Nobody likes egg chips.

Shelisa, I don't think,
separated her yolks and her whites.

It's just all in there together,

and I feel like that might cause
some issues with the pastry.

They're going to be too wet.

-Not flaky enough, right?
-Certainly.

It's, like, too sticky.

Well, she's already in trouble.

Going with it.

So, okay, it's doughing.

-Glennia, how's it going over there?
-It is going.

To a good place or a bad place?

It's going to a place,
and we're gonna go together, so...

-[laughter]
-...it's going.

Ohh. "Place chilled dough
on baking sheet. Fill with jam."

I think Shelisa
is filling her pastries now.

I think they should all be really careful,
though, not to overfill them.

Otherwise, they won't be able
to decorate on top.

-It's too domed, also.
-You're right.

"Fill with jam." What jam?

Damn, Jesus, criminy.

[laughter]

[Glennia] I picked the marmalade
'cause it's, like, orangey.

Glennia is putting the jam in her pastry
and now she's putting on the top.

I'm just afraid
that it's a little bit thick.

Otherwise, she's doing well.

There ain't nothing wrong
with being a little thick.

-Okay.
-All right?

I have what I think is a pastry,
over here.

Are you gonna put it in the oven soon?

-Hopefully, in just a moment.
-Yes, Glennia!

Oh, wow!

[Larry] Okay, close. All right.

Larry's pastry just went in the oven.

Ah, what a dang treat. I can't wait.

He's looking at that
like he's looking at a movie. Look.

[laughter]

Look. "Oven...

bake my pastry, baby."

Maybe that's how he gets his oven to work.

[Jacques] Look at him.
I think he's praying.

-Were you watching your pastry, Larry?
-No, the timer.

I was trying to set the timer
for ten minutes.

Oh, we thought you were
staring at your pastry in the oven.

-No, ma'am.
-[they laugh]

[Shelisa] Three-and-a-fourth cups
of royal icing mix.

Four tablespoons of water.

I have not made royal icing before.

Hopefully, I'm doing this right.

-[woof]
-Oh, no, no, no.

Oh, come on.

No, this is not good.

There we go.

I do not think that is icing.

Maybe I should put some more water.

Oh, it actually does look like frosting.

Eighteen minutes left!

I'm not used to all this confusion.

[Jacques] That's great.

-[Nicole] It's my favorite thing.
-He's walking with the chair.

[Nicole] Just slowly.
It's almost like a Steadicam.

[Nicole laughs]

-You think he's gonna come back like that?
-Yes.

One can only hope.

[laughter]

Everybody on this crew is wonderful.

-[Glennia laughs]
-[Shelisa sighs]

You beating stuff up over here?

This is really difficult to work with.

It's not doing what I want it to do,
so I generally don't like it right now.

Front of his face
looks kinda like a little butt.

This just doesn't mix.

I think Shelisa was trying
to make gray by mixing

-black and white modeling chocolate.
-Yes.

Which is a good idea,

but then I feel
like she didn't mix it all the way.

Actually, I like to roll it
in between my hands, fold it,

mix it, fold it, fold it, and then...
That goes very fast.

[Shelisa] Art teacher skills coming in.

That's not bad. [chuckles]

[Jacques] Larry's pastries
don't really look baked.

-Oh, that's bad.
-So I wonder if we're going to eat...

raw pastry.

I'm not gonna eat no raw pastries.

-It doesn't matter how cute Lar-Lar is.
-[Shelisa] What's this?

Yes.

Yes.

[Glennia] I don't know
if my pastry is done or not.

I think she should look
for that golden-brown look.

I think I'll put it back as long as I can.

Larry is painting his pastry
with the royal icing and it's very runny.

[Larry] Oh, no.

No, no, no! 

-It's all over the display now.
-It's all over his little fingies, too.

Eight minutes remain, you guys!

I wanna see decorations

and I wanna be able to tell
what kind of animal you made!

[Glennia] Um...

I'm pretty sure it's done. It looks done.

At this point, I think I need to, like,
get it out and get it together.

Oh, God, it's soft.

You know what?

That's why I put it on the blue thing
in the first place.

He looks cockeyed.

Okay, I don't know
what those green things are.

Improvising with apple chips.

Okay. Just gonna go with that.

[Nicole] I believe in you!

I believe in all of you!

We believe in you, too.

-Hey, Larry.
-[Larry] Yes, ma'am?

Are you feeling good
about what you've made?

Um...

[crickets chirp]

...we're trying.

[Nicole] Okay.

One minute left, my friends!

[Shelisa] Oh, my God.

[Glennia] Really pretty flowers.

Trying to make their teeth.

This isn't working.

Twenty seconds left!

Got some green on here somewhere.

Fruit'll help.

[judges] Five, four, three, two, one!

-You're done!
-[klaxon sounds]

Elephant in there.

All right, Larry.

Let's remember the jungle pastry
you were trying to make,

and let's see what you did, Larry Bear.

-[Larry] Nailed it.
-[Nicole] Larry!

[Nicole laughs]

I love it. It's huge!

It is so big.

I think your royal icing
was a little bit too liquid.

An easy fix is to add
a little bit of powdered sugar,

and maybe that will help

-to hold your decoration on top.
-Thank you.

We can tell it's an alligator,
which is great.

I like how you added the texture
on the top.

-Thank you.
-All right, Larry.

Let's taste this gator!

The pastry has a good flavor,
but it's unbaked.

I think it's great that you decided
to go for such a big pastry.

The only downside
is that it is a little bit underbaked.

-Larry, that was very underbaked.
-[Rachel laughs]

I took the edge 'cause I said,

"Surely that's gonna be crunchy
and flaky."

And then I put it in my mouth,
and it was like, "No."

I did like the taste of the jam.

And I think you did a very nice job

for making a toaster pastry

-for the first time.
-Yeah.

We gotta move on.

So, you went in a circular direction,
and then you made a hippopotamus.

I could tell
that it's a hip-hop-anonymous.

-Are those flowers on there?
-Those are flowers.

I think you did a really nice job
shaping the hippopotamus.

I saw you using the tools,
really getting in there.

You should be really proud of this one.

[Jacques] The pastry looks baked.

How do you check if it's baked?

I put a toothpick in,

but I don't know if that applies
only to cakes,

-but I made it apply to the pastry today.
-No, it doesn't apply.

-Okay!
-You go by color for something like that.

Okay.

Let's eat it.

This hippopotamus has a round ear,
not a dog ear.

[Nicole] I like it, though.

-Looks nice and baked.
-[Jacques] Yeah, it does.

-[Rachel] Amazing.
-And you put a lot of jam and...

It's flaky.

It's tasty.

It's very rare that we taste
something good, and this is good!

Did you add extra butter? It was buttery.

I didn't add extra.

I put in there what the instruction says.

You followed the recipe?

I did follow the recipe.

-Wow! Wow! Wow!
-Wow! Wow!

-That never happens!
-Hallelujah!

Praise Him! We do!

-[laughter]
-[Rachel] It tastes nice and buttery.

I like the jam in there.

Um, so it looks cute
and tastes great, too.

Glennia, thank you for a yummy,

Hello, Shelisa. Let's remember
the jungle pastry you were trying to make,

and let's see what you did.

-[Shelisa] Nailed it!
-[Nicole] No!

-Oh, boy, he dead.
-[Shelisa] He died.

-[Nicole] What happened to the head?
-[Shelisa] It fell.

Obviously, your elephant melted
quite a bit.

I think your elephant was beautiful.

I think we can definitely see
that you are an art teacher.

I think the colors are great.

-How'd you make the leaves?
-[Shelisa] Um, those are apple chips,

-spray-painted green.
-Oh, really?

Oh! Very creative.

All right. Well, let's do it.
Let's taste this.

It's definitely underbaked.

The recipe called for the yolks.

-That's what I thought.
-You put the whole egg.

-Yeah.
-And your pasty became too sticky.

That will make it cook longer.

The icing is also very sweet,

-which is kind of nice.
-Yeah, I think you did a nice job.

I didn't have any of the middle.

I decided I was just gonna have the rim.

And I thought the rim tasted really nice.

-Thank you.

Door Two, Round Two.

[yawning] I'm tired.

Rachel, don't you think we should just,
like, stop and take a break?

[Rachel] That might be a bad idea.

The jungle is a dangerous place,
after all.

But I've got something that can get
even the slowest of creatures moving.

You'll be bouncing off the trees
when you make this...

-[Glennia gasps]
-[Shelisa] Uh...

It's a sloth coffee cake!

[he chuckles]

[Nicole] This cute little guy
is hanging from a tree...

-[slowly] Hey.
-[Nicole] ...drinking a cup of hot coffee.

[Jacques] The sloth body
is made out of cake,

and the arms are modeling chocolate.

The whole thing is covered in buttercream,
piped to look like fur.

The sloth's going to be tough,
but just hit your panic button,

and one of us will come to help you
for three minutes.

Oh, and Larry, Larry, Larry,
you struggled with those pastries.

But we wanna help you out,
so you're getting an advantage.

At your station,
you'll see the "tiny hands" button.

Hit that, and the other bakers
are allowed to continue working,

but they must do so
with teeny-tiny little animal hands.

[Glennia laughs]

What are you waiting for?

You're making a sloth cake.

You're not being a sloth.

-Go! Go bake!
-[klaxon sounds]

Go!

Coffee extract.

I can carry all of it.

[Larry] "One container of cake mix."

"Do the wet first." Okay.

Hey, Jacques. How would you
go about making that sloth cake?

First, make the cake batter.

Be sure to add an extra-strong
cup of coffee for the flavor.

While the cake bakes,
make the buttercream.

This buttercream will be used for the fur,

so it should have a thick
and firm consistency.

Next, assemble the sloth body
by stacking and carving the cake.

Sculpt arms and legs
out of modeling chocolate,

and pipe on buttercream fur.

Finally, create a sloth face,

coffee cup,
and all of the finishing touches

that will make this sloth cake truly wild.

It's a lot of work.

Really depends on the skill of the baker.

Oh, my God.

What kind of fridge is that?

I have not made
a coffee-flavored cake before.

I don't know what two-thirds is.
That's why I teach art.

So, yeah, this will definitely
be a challenge.

Coffee, coffee, coffee.

I'm gonna go with the French press,
because I think it'll get a better taste.

Dang, that was good.

My beans.

Considering I won the first one,
I do feel a boost,

but I'm also still really nervous.

Coffee brewing.

I don't know what shape of cake

I'm supposed to make for a sloth.

How do I get it on the... perch?
I don't know.

Oh, shoot. Cup of coffee.

Glennia has her coffee.

And I will say, it didn't look very dark,
so, I don't know how strong that is.

When you flavor a cake with coffee,

-you need very strong coffee.
-Right.

Okay.

This is not what I thought it would be.

[clattering noise]

Do I like sloth? As an animal, sure.

I think they're cute, they're cuddly,
and they're kind of fun to look at.

[clattering continues]

[slowly] Hey.

[dog whines]

But they're very slow.
They walk very slow, so...

Ninety minutes left, you guys!

I think it looks good.

I think this is what
batter's supposed to look like.

[she sighs]

[Glennia] This is gonna be delicious.
Okay.

I may be in trouble.

[dog barks]

What am I gonna do? Oh, gee.

Wes, I'm gonna hit "panic."

Wes?

[bell dings]

We got a panic!

-Rachel, get on in there!
-All right. Larry, I'm coming.

-Hello, hello! How can I help?
-Hi.

-I made my cake.
-Okay.

But think I either put it in
too big a cake, or not enough mix.

-What would you do? Put that in there?
-Hmm.

If you bake them in two separate pans,

the advantage is that they'll bake faster.

-Okay.
-That sound good?

-Thank you.
-Awesome.

-Anything else I can do?
-Um...

-No, I think I'm good for now.
-You're good?

Yeah. Thank you.

How'd you open your butter sticks so fast?

My wife told me to mix the butter
for five minutes

before I do the cream.

That's what I'm doing.

[dog barks]

I'm thinking I'm gonna hit the button

because I figure at least
it'll give me three minutes

while I wait for the buttercream.

[squeaking sound]

Oh, dang! Shelisa and Glennia,

put on the tiny sloth hands.

[Shelisa] Oh, gosh!

I could still scoop
powdered sugar with this.

Joke's on you, Larry.

I'm gonna go get my fondant
while I get my hands on.

I should smack you with these hands.

[sighs] Okay.

Um...

Eyes are black.

Okay.

[clattering]

-Oh, no!
-[Rachel laughs]

For three minutes,
they have to work with that?

Thirty seconds left!

[Shelisa] If this falls, it's on you guys.

[he laughs]

-[she groans]
-[kazoo sounds]

All right.

You're done.
You can take off the tiny little hands.

It tastes good.

[she sighs]

This has to be wrong.

[Jacques] Like Larry, she was supposed
to beat her butter first,

and then add the sugar.

You need the buttercream
to be a little bit heavier.

You don't want the buttercream
to collapse.

I'm not doing this again.
That's gonna take me a thousand years.

Going with it.

Thirty-nine minutes remain!

Jacques, how do people normally check
if their cakes are done here?

-[Nicole] They buttercream it.
-[Rachel laughs]

And then they put it on a plate
and they go, "Nailed it!"

And then we eat it and go,
"This isn't done."

As long as I get two pieces on...

like this, I'm okay.

I think this sticks like this.
Oh, wait. It goes down there.

I called it.

It's melting.

I wanna freeze this stuff.

[Larry] I'm making his arms right now.

Well, I'm trying to.
Let's put it that way.

I swear, next time my wife says,
"Cook something,"

I'm gonna say no. [chuckles]

This is like hard Play-Doh.
My kids think that clay is hard.

I'll bring them fondant,
give them something to complain about.

These are the legs.

This whole thing's gonna tip over.

Larry's sloth arms

are the biggest sloth arms I've ever seen.

[Larry] He's got really strong arms
and no body.

[he laughs]

So that's a choice.

I'm trying to do what I think is fur.

Making the buttercream fur
is pretty challenging.

It's melting.

My buttercream is just not staying put.

How do I get it to stay?

It's just not working.

-[squeaking sound]
-Oh!

It's a panic!

Oh, boy!

[she yells]

[she squeals]

It's a panic!

[she grunts]

[laughter]

-How do I keep him from melting?
-Okay, okay.

Okay, so, look, your buttercream...

has a little bit too much milk.

Make it a little bit fatter.

Put in your powdered sugar.

-Okay, and then, put it on a higher speed.
-[Rachel] That'll help thicken it up.

It's thicker already.

[Jacques] That buttercream's
going to be a lot stronger.

You going to be able to pipe it.

And then you'll have more defined fur,
which will look nice.

-Okay.
-Yes.

[Nicole] You're done!

[Shelisa] Airbrushing time.

I'm just gonna go with it.

I think we can see the art teacher
in Shelisa coming out,

'cause she's painting her sloth now.

How do I cut this stuff?

-[Jacques chuckles]
-[Nicole] Oh, no!

[she gasps]

When did that happen?

-[Nicole] See?
-[Jacques and Rachel] Oh, my God.

This is a difficult cake,
because of gravity.

[Shelisa] Oh, my God.

Do you have any plans for the sloth arms?

[Shelisa] Some white paper.

Everything else is too heavy.

[Jacques laughs]

Now I have to get color on him first.

You may wanna stand back.

The buttercream is brownish, grayish
on the model, to represent his hair.

[screaming]

Maybe my colors are off a little bit.

Five minutes remain!

I don't know how to do a freakin' nose.

How do you do a nose?

Jellybeans.

I'm curious to see their faces.
That's where things can get kind of scary.

God help me.

Some spilled coffee.

Thirty seconds left, you guys!

Got the nose. Got the eyes.

The mouth is, well...

He's supposed to smile.

Oh, it is a jungle.
I got some flowers in here.

Yes!

Really want the legs.

It's gonna have a really long leg.

Five, four, three, two, one!

-You're done!
-[klaxon sounds]

Close enough. [sighs]

All right, Larry.

Let's remember the sloth coffee cake
you were trying to make,

and let's see what you did, Larry!

[Larry] Nailed it!

[Nicole] Oh, Larry!

Oh, boy! [laughs]

Oh, my God!

Honestly, this, combined with the smile
on your face, is delighting me.

This is so nuts!

It looks like a sloth that really
goes to the gym and has big, big arms,

but he didn't work on the legs.
He did nothing with his leg.

And then none of the colors are right.
None of them.

I like that you did your own spin on it

and kind of got, like,
a blue eye-shadow look, a little bit.

I think the smile's fantastic.

I had fun. That's all that matters.

Larry, thank you.

-Whoa.
-[Larry chuckles]

All right, Glennia.

Let's see what you made!

Nailed it!

-I love that it's trembling.
-The way it jiggled! [laughs]

It shook a little bit.

[Nicole] Oh, I love its little arms.

-I think it looks more monkey-like, maybe?
-[Glennia laughs]

I do like that you have two arms,
two legs, a body, and a head.

At least that's there.

I will say this, you did get fur.

I like that you added the flowers to it

and added some nice color.

And I can see you really
got that hair sticking up nicely

after adding more powdered sugar.

Overall, amazing job.

-Yeah.
-Shall we?

All right, Shelisa.

Let's see what you did.

[Shelisa] Nailed it!

[Nicole laughs]

This is...

Oh, my God. This is wild!

Oh! His arms look like beef jerky
or some sort of meat. 

I made it more realistic
because their legs are longer.

Whoa. What? No. You... [laughs]

It looks like maybe more "tree"?

Like, more "tree". Not an animal.

[they laugh]

But you never gave up.

I tried.

I mean, I swear,
I don't know where to start.

[chuckles] When I look at that,
"Okay, what would I do?"

And when I see the result, I'm thinking,
"I don't know."

[laughter]

I think it's amazing.

We can tell you're an art teacher
'cause I see some artistic license here.

I think it's a super interesting cake
to look at,

and I think that part of it
is my favorite.

This is my favorite challenge all season,

and I cannot wait to taste them.

So, please cut us a slice of your
sloth coffee cake for us to taste.

The judging's gonna come down to taste,

because when I see
the other contestants' sloths,

no one's hit it out of the park.
Nobody.

All right, Larry!

You're up first.

Buttercream is pretty heavy,
which is good for this type of cake.

But I have some grainy texture in it.

It is a little bit on the dry side,

so maybe underbake it
a little more next time.

But overall, I think
it looks really nice on the plate.

-Thank you.
-I liked your buttercream.

I thought it was, like, a little sweet,

but, like, I really liked it.

And then it was as if someone, like,

drank a cup of coffee
and coughed on the cake.

Like, it was just, like,
the faintest amount of coffee.

Overall, I'm happy.

-Thank you.
-All right. Let's move on to Glennia.

[Jacques] I like the texture of your cake,

but the flavor of the coffee is too faint.

You want to make a very strong coffee.
You want to make a statement.

-Put a little bit more.
-Okay.

I think you have a really nice,
thick, fluffy cake.

But next time, you could add
some instant espresso.

-Okay.
-There was a little crunch 'em part to it.

I think I just got like the end
of your piece of cake.

was the buttercream.

Texture is important, too,
when it comes to cakes.

So if you just baked it a little bit less
and mix it a little less,

I think you'd have a really solid recipe.

Overall, it's not a bad cake.
