I hate to think
That I'm a hoarder,

So we save every dollar
We possibly can save.

If we've got a board
Laying somewhere,

I will knock the nails
Out of it and reuse it.

We don't need

Looks like it'll hold
About four gallons.

It almost looks like a toy,
Something you'd set on a mantle.

It's gonna be perfect
For our purposes.

We can already envision how
We're gonna build this thing.

It's really upscaling this,

And it's just a perfect piece
For us to use.

I got a really tall order
I got to fill.

I need to put another
One of these totes out here.

And I can fit it right here,
But the problem is,

Is I ain't gonna be able
To dang keep it warm enough.

To make sure his mash
Works off quickly,

Even with
The falling temperatures.

It's starting to get cool

It's cooling down,
So the mash works off slower.

When it works off slower,
I can't produce it fast enough.

Every year, I come up
With some way to damn...

Keep this stuff warm
During the winter, and I just --

I don't have electricity here,
And I'm running out of time.

You know, I need to get
On the stick here

And figure out a way
To make it work.

I had this old-timer
A while back tell me

That if he had buried his totes
In the ground most of the way,

Just leave part of it
Sticking out of the ground

And you put straw
All around it,

The heat that the mash
Puts off itself

Is enough to keep it warm.

The mash will still work off
Into late, late season.

I'm not sure how long
We'll be able to make that work,

But hopefully it'll work
All winter long.

My brother's got a trackhoe.

I'm gonna call him and see
If he can't dig this thing out.

I don't have time to waste
Digging this hole.

I've really got to make
The shine for the bandits.

Of a customer to lose.

We built a full cap.

We've got to reduce it down
To that two inch.

For our fractionating column.

This is something
Different for us.

To cut this back.

We've come up with an idea
Of rolling the tin back,

Run us a cord
On the inside of the still,

And then we'll be able

Care of the job.

We could see a lot of rust

That we couldn't see before.

And could transfer over

So we decided we're gonna
Put our mash underground,

Put a bunch
Of damn insulation around it.

So as long as this crazy idea

A good wintertime spot.

That's running along the ground
There is kind of diverted away

So it don't fill
My hole up with water.

Because if that straw gets wet,

That's gonna sort of
Defeat the purpose.

Goodness gracious.

There's a bunch of shooting
Going on over there.

I imagine everybody's
Sighting their rifles in

Because deer season's
Coming around.

I ain't too worried about
The bullets flying over here.

Most people that shoot like
That don't just

Shoot randomly through the air.

A lot of people hear gunshots
This day and time,

And they go all to hell.

When I was growing up,

You used to hear that

You opened the door
Of the house.

It's just a sound
I've heard my whole life,

Gunshots and chainsaws
Echoing through the mountains.

So that's a good sound to me.
That reminds me of my childhood.

I got to keep this
As dry as possible.

The ground has
Its own moisture in it,

So this straw
Is not gonna last that long.

It's gonna start rotting
And breaking down

And get all wet and soggy.

And if this gets wet and soggy,

Well, there ain't gonna be no
Keeping it warm at that point.

I don't want it to get cold.

If the yeast goes dormant,
Your mash is gonna die off

Or quit working.

Time to to make some mash.

There it is. Good fresh water

Right off the side
Of the mountain.

It'll be a little while,
But when that fills up,

We'll put some grains in there,
Pour some sugar in there,

Stir it all about, and we'll be
Soon making some shine.

So hopefully this works out
For me. I don't know.

I've seen old time pictures
Of barrels halfway in the ground

With about this much of them
Sticking out of the ground.

But I truthfully thought
That was just for summertime

To keep it
At a lower temperature.

Now it's got a damn hole in it.
Son of a bitch.

But I've had some old timers
Tell me

That they did that during
The winter months, too,

Some of the cold months,
To help them pull off runs.

And, hell,
We're trying it ourselves.

That's all the sugar.

This mash might work off faster
Than we thought it --

And we have pure ethanol.

This is another one of the most
Important pieces here

Is this thermometer.

What we're trying to do
Is stay

At the boiling point
Of the ethanol.

That's between
72 and 78 degrees.

So we're gonna have to
Adjust these burners

While we run it.Yeah, constantly.

We get over the temperature,
We're getting water.

If we get under it,
We're getting nothing.

We're not getting nothing.
