I'm having a play date

with my sister-in-law, anna,
and our two tiny cuties,

together on the farm.

Mm.

Burgers, cliff.

I'm
making a healthy lunch

that's not only delicious,
but it's good for us, too.

She's going to love my homemade
granola bar treats that'll keep

us fueled up for all the fun,
my juicy falafel spiced turkey

burgers, grilled veggie salad
with a creamy avocado ranch,

and a super carrot apple
juice to wash it all down.

this is me, molly yeh.

I'm a cookbook author
and food blogger.

This is my husband, nick.

This is our new addition.

And this is our home, our
farm on the north dakota,

minnesota border,
the place where

I eat, sleep, and breathe food.

These look like a party.

My
food is a delicious

mix of my chinese
and jewish heritage,

and a taste of the midwest.



my sister-in-law,
anna, and her not

so little anymore
baby, cliff, are coming

over for a cousins play date.

I know we're going to
work up an appetite,

so I am making my
homemade granola bars.

They're chewy and
sweet, and they've

got a great nutty crunch.

And they're a one bowl recipe.

So I'll just mix
everything up, top

with candy coated chocolates,
apricots, and nuts, and bake.

I'm going to start with a can
of sweetened condensed milk.

This is going to bind the
granola bars together,

and it'll also add
great sweetness.

and I'll also add half
a cup of cashew butter.

You can use any nut
or sweet butter here,

but I'm using kashi better today
because I love the combination

of cashews with apricots.

Cashew butter is so delicious
and smooth. K so this

will add tons of rich
texture to the granola bars,

and that great nutty flavor.

I'll add this right in.

Cashew butter is also
a little bit fancy.

I'm going to add one
tablespoon of vanilla

extract for some
nice flavor, and half

a teaspoon of kosher salt. And
now I'll mix this to combine.

If you want to add other flavor
extracts, different nut butters

or seed butters, tahini
is great these, use

whatever you have on hand.

Oh, this is looking great,
and smooth, and combined.

I'm going to add my oats.

I'm going to add 3 and 1/2
cups of quick cooking oats.

And it's important to use
quick cooking oats here,

because they're
smaller pieces that

incorporate more easily
into the mixture,

giving you a chewier bar.

And I like to up the
nutrition in these

by adding some seeds,
so any sort of seed mix.

Today I'm going
to add flax seeds.

It adds great texture,
nice color because they're

speckled throughout.

And then one cup of
roasted, salted nuts.

I'm using a mix of almonds,
walnuts, and hazelnuts here.

And I'm going to save a
few to add on top, as well.

And now I'll mix
this to combine.

bernie and I love it when
anna and cliff come over.

Anna and I are both new
mom, so inevitably we start

talking about new mom stuff.

And it's awesome.

I love having them so close by.

This mixture is looking great.

I'm going to grab my pan.

I've lined the
pan with parchment

so that it comes up about
an inch above the pan,

and these little wings are going
to help me with the bars out

of the pan once they're baked.

So I'll pour this right in.

I have made so many
batches of these.

I make a big batch,
and then keep

them in the fridge or freezer.

And they keep for
quite a long time.

I'll press this mixture
out so that it's even,

and these first come
out nice and thick.

Before they go in
the oven, I'm going

to make them really pretty.

I'll top them with
these colorful,

candy-coated chocolates.

I'll press them into the
top, so that they stay.

And now I'll add
some dried apricots,

and these are going to add
great chewiness and color.

And apricots and cashews are
such a vicious combination.

And I like adding
them on top whole.

Because then, when I
slice them into bars,

they'll get sliced up.

And lastly, I'll add a
few more nuts on top.

These are ready to bake.

I'll bake these at 350
degrees for 25 minutes,

until the edges are golden and
pulling away from the sides.

They're going to be so
nutty and delicious,

and pack a ton of
power for playing.

my granola bars are perfectly
browned around the edges.

And they're so colorful.

I love them already.

I'll let them cool, slice them
into bars, and package them up.

They will be great for
on-the-go snacking.

I'm going to sneak a taste.

Mm.

I love how chewy these are.

These are perfectly nutty.

I'm going to grab bernie

because I think I
hear anna and cliff.

Then I'm brightening
this afternoon

with the grilled corn
salad and a creamy avocado

ranch dressing.

Later, I'm giving turkey burgers
a much needed boost with some

warm and savory falafel spices.

And then we'll
cap this play date

off with a fun-filled lunch.

Mm.

Ok.

It's sweet, but
it's not too sweet.

It's got some
zinginess from ginger.

And we're going to turmeric
because we're cool moms.

I can't wait.

What do I do?

We're just going to put
everything in the juicer.

Do you want to start
with the carrots?

I'm going to
chop up the apples.

I would not be able
to hear it, anyway.

and then I'm
going to chop up the ginger.

And you don't even need
to peel any of this.

Oh, ok.

Because it all gets
weeded out in the juicer.

Apple time?

Yeah.

I like this.

Oh.

Push that one in.

use those mom arms.

You can add the ginger,
and a turmeric is next.

Oh.

This is fresh turmeric.

Oh.

Kind of looks like ginger.

So am I smelling the
ginger or the tumeric?

Both.

Next, let's add the
juice of a lemon.

Ok.

And I like adding
this at the end

as opposed to in the juicer.

Because if you get
the rind in there,

it might be a little bitter.

I'm just going to love this.

Do you want to
squeeze that in?

Oh, fun!

I'm going to add a pinch
of cayenne for a little heat.

- Oh, my gosh.
- Good.

Ok.

Apples were
bernie's first food,

but she's never had
a liquid like this.

How do you think
she's going to handle it?

I don't know.

I'll put some on a spoon.

Oh, ok.

And then she can
just chew the spoon.

Ok, this is ready.

I'm going to grab
some frosted glasses.

This is so pretty.

Here we go.

That's sweeter than I thought.

While
my sister-in-law looks

after our little
ones, I thought I

would make us a flavor packed
lunch before cliff and anna

head home.

So I'm making my grilled veggie
salad with avocado ranch.

It's colorful, and
a little bit sweet,

and kind of buttery
thanks to the addition

of avocado in the dressing.

So to get started, I'm going
to prep my orange pepper here

for the grill.

I'm going to chop it up,
ad these nice, big pieces

will go right on the grill.

I also have some green
beans and ears of corn here.

And I'm going to drizzle
them with olive oil.

This will help them
grill up nicely.

And season with salt and pepper.

And I have a grill pan
preheated here over medium high.

And I'm going to grill
these just to get

some nice char marks on them.

I only need to cook
these for a few minutes

to get some
beautiful char marks,

and so veggies start to soften.

But I do want them
to still have a bite.

I don't want them
to be mushy, at all.

And in the meantime, I'll
make my avocado ranch.

I love this dressing.

It's so creamy and herby, and
it'll punch you in the face

with tang, but in a good way.

To start, I'm going to
add half of an avocado

to my blender, a 1/3
of a cup of mayonnaise.

No one said it was going
to be that healthy.

Half a cup of buttermilk,
to add some nice tang,

and the juice of
the whole lemon.

I'm hearing these
veggies sizzle.

I'm going to check on them.

Oh, these are looking gorgeous.

And I'm starting to get
some char on the peppers.

This is what I'm looking
for, and then I'll let

these char on the other side.

Ok.

Let me continue on
with the dressing.

I'm going to add
some fresh chives.

I'll add most of
them to the dressing,

but save a few to sprinkle
on the salad at the end.

Some fresh, flat leaf
parsley, and dill.

I'll season with salt and
pepper, and blend until smooth.

that's such a lovely color.

Look at that.

I'm going to taste it, to make
sure it's seasoned correctly.

Mm.

This dressing is peak
creaminess, and peak freshness.

I love it.

I'm going to get my
veggies off the grill pan

to cool, and then assemble
the rest of my salad.

And now while these cool, I'll
assemble the rest of my salad.

I've got my crisp lettuce
here, and some little tomatoes,

and red onions.

And I'll toss this all together
with my grilled veggies

and dressing now.

And now I'll chop up my grilled
veggies and my orange peppers.

And now I'm going to cut
my corn off of the cobs.

And my favorite, least
messy way of doing it,

is to hold them flat
onto my cutting board,

and then cut off a row of corn.

I'll sprinkle the
corn all over the top.

And now I'm going to toss
this salad with a little bit

of the dressing now.

And then I'll serve it
with the rest on the side.

Look at those gorgeous colors.

It's a work of art.

I love the way that the
creaminess of the dressing

coats all of these veggies.

Yum.

The dressing is
evenly distributed.

And now I will plate it.

Oh, look at all those
beautiful veggies.

Uh-oh.

Flying veggies.

I'm going to finish this off
with my reserved fresh herbs.

Then I'll add one last
sprinkle of salt and pepper.

Oh, yeah.

This salad is so
bright and colorful.

It's giving me all
the feels because it's

got all the flavors.

Next, if
turkey burgers aren't usually

your cup of tea, just
wait until you try mine,

spiced with falafel
seasonings and topped

with a tahini yogurt sauce.

Yeah!

Hey, can you give her

Here's one.

Yeah!

My sister-in-law, anna,
and her adorable son,

cliff, are over for a play
date with bernie and me.

And we're all having a ball.

For the lunchtime
main attraction,

I am making my falafel
spiced turkey burgers.

It's basically all
of the seasonings

from my falafel,
mixed with ground

turkey instead of chickpeas.

And I just cannot
get enough of these.

To start, I've got
half a chopped onion

cooking up in my pan.

So I'm going to grab my spices.

I love falafel that's
heavy on the coriander.

I just love the earthy,
kind of citrusy notes of it.

So I'm going to add a tablespoon
of coriander seeds to my pan

with the onions, and
allow them to toast.

And that's going to
bring out their flavor.

And then I'm also going to add
two teaspoons of cumin seeds,

and 1/2 teaspoons
of ground cinnamon.

This adds the most
lovely hit of warmth.

And lastly, two cloves
of chopped garlic.

And this will cook for
just about a minute,

until it's fragrant.

Oh, man.

I'm already smelling
those spices.

While these finish
up cooking, I'm going

to grab my turkey and an egg.

I'll first crack in
my egg, and this will

help bind the mixture together.

And then I'll also add half
a cup of panko breadcrumbs,

and one bunch of
chopped cilantro.

I love tons of
herbs in my falafel,

so I've also got to have tons
of herbs in these burgers.

I'll give this a
little mix to make

sure that the egg is beaten up.

And now I'll add
my ground turkey.

Growing up.

My mom used ground
turkey for everything,

for meatballs, for meat sauces.

There was turkey in
just like, every dinner.

And then when I went to
college, in the cafeteria,

I continued to
eat the same foods

but they weren't
made with turkey.

They were made with
like, beef meatballs

or pork bacon, way fattier.

And that totally contributed
to my freshman 15.

So now I'm spreading the
turkey out in my bowl

so that I have more
surface area to season.

And when I do it that way,
it's going to incorporate

into the meat more evenly.

So I'll add 3/4 of
a teaspoon of salt.

And the reason you
want to do this,

is you don't want to
over mix ground meat.

Otherwise, it could get tough.

So I'm doing everything
that I can to eliminate

any risk of over mixing.

I'm also adding
some black pepper,

and a little heat with a
pinch of crushed red pepper.

You can add a lot
of heat if you want.

And now I'll add my
onion and spice mixture.

I'm just going to get
in here with my hands.

It'll be much more
efficient that way.

Got to be careful because the
onions are still a little warm.

Ok.

I'll divide this
mixture into four,

and then I'm going to form
this mixture into patties.

And I want to make sure that the
patties are wider than my buns,

because the patties will
shrink once they're cooked.

Ok, just like this.

And now I'm going to continue
forming the rest of my patties.

Now it's time to
cook these guys.

And I want to make sure
they stay nice and juicy.

To do that, I'm going to
add a drizzle of olive oil

to my cast iron pan.

It's heating over medium high.

And now I'll place these
guys right in there.

good sounds.

I want to season these on both
sides with salt and pepper.

And this'll help them get
that nice, golden crust.

Mm.

It smells so good!

Oh, man, I'm really
smelling that coriander.

I'm going to let this go for
five minutes on each side,

until they have that
good brown crust.

And while these cook, I'm going
to make my tahini yogurt sauce.

This sauce is
creamy and cooling.

It is the perfect
contrast to the burgers.

Plus, it's a little lighter.

So you can slather
it with abandon.

I'm going to start with
1/2 cup of greek yogurt.

I'll add a few shakes
of hot sauce, a couple

of tablespoons of tahini.

Tahini is a necessary
accompaniment to falafel.

The zest and use of half
a lemon, chop it in half.

I'll grate in a clove of
garlic, and grating it

is going to help it incorporate.

Season with salt and pepper,
and mix it up until it's smooth.

I'm going to taste this.

Mm.

It's so creamy and cooling.

There is a great
amount of nuttiness,

and I love that
zinginess from the lemon.

This is going to go
great on the burgers.

And speaking of which,
I'm going to flip them.

Oh, wow.

Yes.

This is the crust that
I was telling you about.

Oh, my gosh.

These are going to be amazing!

Yes, that one's good, too.

We're two for two.

Oh, yeah.

Yes, beautiful.

Still to come,

I'm finishing off these
burgers and getting it

all ready for our little party.

Then, play time
is not quite over.

But it's time to eat.

This is so good.

My turkey
burgers are almost done frying,

and now I'm just going
to gather my toppings.

I've got romaine lettuce,
sliced red onions,

and some fresh mint
leaves, which are going

to be beautiful on the burgers.

I'm also going to get my buns.

I love potato buns, because
they're soft and tender.

But I'm also going
to toast them.

Toasting a burger bun is
a really easy way to bring

a burger to the next level.

So, my burgers are ready
and I'm going to toast

the funds right in this pan.

And they're going to
be able to soak up

some of the burger
juices left behind,

giving these even more flavor.

I'm going to toast up
to buns now, one for me

and one for anna.

I'll play some face
down for a few minutes,

just to get them
good and toasty.

Let me plate all my sauce.

Pour this right in here.

Mm.

Mm.

So good.

I'll check on the buns.

Oh, yeah, those are perfect.

These buns are so soft,
but the crispy edges

and such great personality.

And now I'll grab
two of the burgers.

Beautiful.
