Uruka generally takes more
than a week to prepare,

We washed the sweetfish entrails
and boiled them in saké,

then added mirin, soy sauce, and salt.

By doing so,

we made an impromptu, rich-tasting uruka
with just the right amount of bitterness.

Is that even possible?

That's not all they did.

Rather than parsley,
they used diced chives.

By mixing that in, they made
a bright green and refreshing sauce!

Also, instead of garlic, which is seldom
used in Japanese cooking,

they used a citrus and pepper paste,

giving it a very Japanese flavor.

Correct.

This was a Japanese-style salsa verde
using an improvised uruka as its base!

JAPANESE-STYLE

They made a Japanese-style Italian sauce?

Dammit! I'm drooling
just hearing about it!

For them to be able to combine so
many ingredients here in the mountains...

Unlike Japan, Italy has
a long history of eating meat.

And in Tuscany, where these two are from,

duck, rabbit, and boar are often served,
depending on the season.
