TOHTSUKI RESORT HOTEL - 200 PLATE
CHALLENGE ASSEMBLY HALL A

All right!

Fluffy soufflé omelets,

cooked up hot and fresh!

No one's touched the ones
I put out before!

The soufflés, they've deflated!

Oh!

At a buffet, there's no guarantee the food
you put out will get eaten right away.

It's way different from Yukihira,

where food gets to the customers quickly
and at the right temperature.

But at a buffet...

it's up to the customers to decide
what to eat, and when.

The key to a soufflé's texture
is eating it right after it's made.

Otherwise, the dish's integrity
gets compromised!

I can put them out and put them out,

but if they deflate before the customers
even eat them, it's hopeless!

This is bad!

On top of that...

Customers are going for
Nakiri's dish left and right!

ERINA NAKIRI
200 PLATES

Erina Nakiri, two hundred plates reached!

It seems you get it now.

For a buffet, nothing is more important
than appearance and flavor retention.

Put simply, you chose the absolute
worst dish to make for this challenge.

This is where we say goodbye.

Feel free to gaze at my delicious cooking
until time runs out.

METAMORPHOSE

The main ingredient is eggs.

Dishes must gain the approval of both
the suppliers and our skilled staff.

Also, guests must eat at least
200 plates within two hours.

The criteria for passing are not easy.

ASSEMBLY HALL B

This truly is the most crucial stage.

ASSEMBLY HALL C

It is a genuine fight to survive!

ASSEMBLY HALL D

ASSEMBLY HALL E

Dammit!

I haven't gotten a single customer
since the 150th plate!

There's more!

-Okay, no pushing, please.
-What's that?

She said there's more!

Ever since her first customer,

she's gotten busier and busier.

Before I knew it, she'd even started
poaching other tables' customers!

Those are no normal eggs.

To think, her dish could
hold that powerful a secret...

This... This isn't a raw egg!

The "whites" are a gelée
of diluted seawater.

The "yolk" is salmon roe
that's been firmed up with gelatin!

At first glance, this looks
like a hard-boiled egg.

But the "whites" are a mousse
of white asparagus,

and the yolks were used as a base
for a hollandaise sauce.

The balance
between the richness of the eggs

and the slight bitterness
of the asparagus is exquisite!

So then, what's this egg in the shell?

Well, that's...

Hya!

She stabbed it!

You drink this with a straw.
It's a milkshake!

I emptied the shells,

then piped in a drink
made with eggs, milk, and caramel.

I-- It's delicious!

It's so smooth,
with a lingering aftertaste.

It's like she's recreated a brisk morning!

There you have it. All together...

This is a plate of eggs in three forms.

This dish is astonishing!

Each egg opens the door
to an unexpected world!

On a single plate...

The ocean...

the forest...

and the plains, the deliciousness
of all three are condensed right here!

-I wanna eat that!
-Me, too!

And me! Me!

Please!

Is that girl for real?

At that pace,

she'll have no problem
clearing 300 plates!

Takumi Aldini, two hundred plates reached!

All right!

Yukihira!

Hey, what are you doing?

Megumi Tadokoro,
two hundred plates reached!

Soma-kun?

TIME REMAINING

Lack of sleep has really caught up to me.

Erina-sama's grabbing all the customers,
so my dishes aren't going out.

I'm done for!

Calm down...

Calm down...

JAPANESE EATERY YUKIHIRA

Two new customers!

Soma, get them some appetizers
and hot towels.

Also, hurry up and clean Table 3.

And get Table 4 their check.

You can't just say that all at once!

The appetizers, appetizers...

Uh, wait. Huh?

How do I prep those?

My mind's all over the place.

What do I do?

I have no idea!

Ow!

Listen up, Soma.

This helps when you start
panicking in the kitchen.

Just picture what you have
to do, one by one,

and then start moving.

My, what a shame.

But that's the difference
between your skill level and mine.

Have you learned that now?

SILENCE...

Huh?

Impossible, is he asleep?

A little over 30 minutes left...

First, attract customers.

Cooking an omelet on one side
takes less than a minute.

Then, cover and cook
for a minute and a half.

With this number of burners...

-Ingredients... Prep...
-What are you babbling about?

It's gonna be tough!

Don't tell me...

He's still going to try
to reach 200 dishes now!

But how?

Okay!

There's little time left.

It's a hopeless situation.

Just what will you do, Soma Yukihira?

First, just one.

Get just one customer.

And from there...

What is this? It's awesome!

I know! It's called "Eggs Benedict."

C'mon over!

Take a look at this, young lady.

I'm gonna cast a magic spell
on these eggs!

That smells great!

Order up!

It's like jello!

It's delicious!

It melted in my mouth like
a soft, fluffy foam!

Like magic, right?

What's this?

Just a regular omelet, right?

Even if he can rope in a customer or two,

it won't be enough at this point.

Order up!

What is this?

It tastes like an omelet,
but the texture is like a dessert soufflé!

Wow, look!

The outside is cooked
while the inside is fluffy like foam,

so when you press it with a spoon,
it bounces back!

It's so springy!

What's all this?

Hey, let's take a look over here.

Here, help yourselves!

Please!

All right, I've got customers.

I can't let this chance slip by!

He still has just over 100 plates?

There are only 30 minutes left.

It's impossible.

The real fight begins now!

-Eeek!
-Yeah!

Two hundred plates reached!

Two hundred plates reached!

Oh, my, what a shame.

I've used up all the ingredients
I'd prepared.

I didn't think they'd eat
so much of my cooking.

All right, you can call it quits.

Thank you very much!

See you!

I don't believe it!

That girl cleared 380 friggin' plates!

Now I've got nothing to do.

Maybe I'll take a peep
at how Erina's doing.

Come to think of it...

I wonder what happened to him?

Soma Yukihira-kun?

Cover the pan,

and while they're cooking,
get the next round of ingredients ready.

He's so fast!

That's some incredible technique!

All right...

Whip up the egg whites,

then add fresh cream, salt,
and pepper to the yolks.

Taste test... Good!

They should be about done.

Garnish...

Special tomato sauce and parsley...

Sorry for the wait!

Hey, the food at the next table
looks pretty awesome.

You're right!

He took my customers!

ASSEMBLY HALL A

Even though he's taking on that much work,

his cooking pace
is actually getting faster.

Each time he finishes a round of plates,

he improves his cooking procedure.

He's refining it.

This is awesome!

It melts in your mouth!

How can it be so fluffy?

He's fast.

And getting more and more of a crowd.

Guests are telling other guests.

There's a term for this: "live cooking."

Completed food
is not brought to the table.

Rather, a point is made of cooking
in front of the customer.

That increases one's anticipation,

creating excitement as ingredients
are transformed into the completed dish.

Awesome! He keeps making more and more!

He's so fast!

He's cool...

Yukihira is capturing
his audience's hearts,

as if he were putting on
an elaborate show.

To use his own skills,

highlighting cooking itself
to turn the tables...

ASSEMBLY HALL B

Ryoko Sakaki, two hundred plates reached!

SHUN IBUSAKI
200 PLATES REACHED

Yuki Yoshino, two hundred plates reached!

I did it.

ZENJI MARUI
200 PLATES REACHED

Yeah!

Raar!

We did it!

ISAMI ALDINI
200 PLATES REACHED

I wonder how Big Brother's done?

There are five minutes remaining.

TAKUMI ALDINI
200 PLATES REACHED

Yukihira...

MEGUMI TADOKORO
200 PLATES REACHED

Soma-kun!

Wow!

Soma Yukihira, two hundred plates reached!

TIME REMAINING

That's it!

Utensils down!

SOMA YUKIHIRA
200 PLATES REACHED

What's with that,
"Hey, did you see that?" face?

Making it just under the wire
is nothing to brag ab--

What a shocker!

I thought for sure you wouldn't clear
more than eight plates.

Still, using showy tactics
like that so you could make it...

That was a surge of momentum,
wouldn't you say?

Yes.

The first thing needed in this challenge

is the ability to visualize the situation.

Above all,
what's key is to have a clear idea

of what items would be needed

for a hotel breakfast served buffet style.

There's one more thing.

An ability needed above all
when in the kitchen,

where the unexpected always happens...

The skill to adapt to a situation where

a major blow is dealt to your chosen menu
item, which he demonstrated perfectly.

He's a bit unrefined, but he's
an interesting specimen, isn't he?

On the other hand...

ERINA NAKIRI
407 PLATES

A total of 407 plates!

Erina Nakiri was the only student
to clear the 400-plate mark.

Then there was the girl who used
all her ingredients, serving 380 plates.

But if you rely
on showy cooking like that,

you'll never make it to the top.

What you need is an approach that's
built on cutting-edge cooking theory.

For example, cooking like mine.

Right?

I haven't introduced myself, have I?

I'm Alice Nakiri.

ALICE NAKIRI
1ST-YEAR HIGH SCHOOL DIVISION

That's a name with far more prestige
than any of you.

Remember it well.

Alice... Nakiri?

Nakiri?

Yes.

Erina and I are cousins.

I lived in the same mansion
as her till the age of five.

Mistress, this is where you've been?

Ah, perfect timing!

Tell Soma Yukihira here
about my background!

Ah, well...

Miss Alice is Erina-sama's cousin--

I already said that!

Never mind! I'll tell him myself!

My father chose my mother's hometown in
Denmark as the location for his company,

Nakiri International.

There, starting with research
on cutting-edge cooking techniques

based on molecular gastronomy,

they study the mechanisms of taste
and smell, and even cerebral physiology.

It's a general research center
for fine cuisine!

I stayed there till I was 14,

then came to Tohtsuki Academy

to beat Erina and take the top spot!

There's no way my cooking
will lose to some chef

who constantly relies
on "cutting-edge techniques."

Gah! How spiteful!

You've always been that way!

When I was three, you'd steal my toys.

When I was four, I made a cake and...

It's disgusting.

That's what you said!

And I'll never forget how
when I was five, you--

N-- None of that has anything
to do with anything!

And as for you, Soma Yukihira-kun.

You talked big at the opening ceremony,

but the days when people get worked up
over showmanship are over.

As proof of that,

you were down to the wire for a challenge
that only required 200 plates.

Man, I sure was worried!

The unknown can be pretty scary.

I really messed that up!

But...

I gained the experience
that comes from messing up.

You're an annoying man.

Anyway, I'm not losing to any of you!

I look forward to beating you all myself.

Interesting.

I'll be there, waiting.

Indeed.

Well, till next time.

Yukihira!

Soma-kun!

I swear! You had me worried
somethin' fierce!

You had no game plan whatsoever!

O-- Oh, sorry.

Attention, everyone
who cleared 200 plates.

Your next challenge
will take place in four hours.

Until then, get some rest.

He's kidding, right?

That gives us
just over three hours to sleep!

That's right, this training camp...

Ain't over yet!

I can't take it anymore!

My legs won't even move!

I just wanna lie down...

I'm so exhausted.

What could this be about?

S-- S-- Suddenly having us
assemble in the lobby...

Nothing's written in the schedule.

Huh? Wait a minute.

This pattern...

Don't tell me it'll be
a challenge like last time!

Very well...

It seems you're all here.

No way! Not again!

A few words before we get right to it.

So far, 352 students have failed,

leaving 628 remaining.

Though it may seem cruel,

this training is a taste
of what it's like to be a chef.

You must keep your cool
in unfamiliar situations,

always retaining a "dialogue"
with your ingredients.

If you become a chef,
you'll face even greater pressures.

There will be nights where you must
endure anxiety and indecision,

deal with various situations,
and handle yourselves well.

Living as a chef is like being out in
a wasteland, braving the storm all alone.

The farther you traverse it,
the more difficult things become,

and you lose sight of your goal.

Then, you realize
you've reached the summit,

and some may even forget the way back.

But!

I want you to remember this.

Remember that here at Tohtsuki,

there were comrades with whom
you left tracks in that wasteland.

That fact...

will comfort you when one day
you set out on your own.

From the bottom of my heart,
I wish you the best as you fight on.

Now then...

Let's begin the final segment
of this training camp's program.

I knew it!

Welcome!

The final act is

to congratulate you on completing your
training, and offer you this humble meal.

Please, enjoy a full-course dinner
served up by our graduates.

To all 628 of you who remain:

Congratulations on clearing
the challenges of this training camp!

Enjoy to your heart's content!

Yes!

For real? No way!

There's nothin' "humble" about this!

This is something no one in the world
but us will get to eat!

I'm so glad to be ali... ve...

Marui's finally kicked the bucket!

Please, have a seat, Madam.

Thank you.

It's delicious!

Sob, sob!

Don't cry, Yoshino.

Cooking school?

TŌTSUKI CULINARY ACADEMY
TRANSFER GUIDE

Why do I gotta go someplace like that now?

Payin' money to learn
to cook is just stupid.

Soma-kun, you okay?

Oh, yeah.

I was just thinkin',

this school is more interesting
than I'd imagined.

Huh? Meaning what?

Nah, it's kinda private.

C'mon, let's eat.

Yeah!

This is a very interesting year, isn't it?
And that earlier matter...

Yes, I'm quite looking forward to it.

The grand stage where a select few
will battle with all their might...

the Fall Selection.
