to battle it out

and see whose dessert will be chosen
for someone's big day.

All right. Bake Squad, today's challenge
is gonna be enchanting,

it's gonna be whimsical,
and it's gonna be larger-than-life.

And I'm thrilled to have Octavio here
to tell you all about it.

Octavio, welcome to Bake Squad HQ.

Thank you. Good to be here.

Welcome, Octavio.

-Bakers, I'm gonna change it up today.
-All right.

This is a big, big challenge.

A celebration of this size
is going to require more than two hands.

So to make sure we rise to the occasion,

you will be working

in teams of two.

-Bakers, I paired you up.
-Of course, you're the boss.

-Gonzo, you're gonna work with Ashley.
-Uh-huh.

because he's about to embark on
one of life's greatest adventures.

-What is it?
-So I'm here for my fiancée Thuy.

-Aww!
-Wow.

Gorgeous.

This event is actually gonna be

for our royal Winter Wonderland wedding
that we have planned.

[Gonzo] It's a wedding.

-All right.
-[Tosi] It's a wedding!

-Wonderland.
-Winter Wonderland.

So me and Thuy
actually met in high school.

Oh my gosh!

Senior year
we became boyfriend and girlfriend,

and we've been dating for 12 years.

-Wow!
-Wow!

Thuy is amazing.

I am so lucky and so blessed
that she chose me to be her life partner.

So cute.

[Octavio chuckles]
We're both just really big kids at heart.

-Wow.
-Okay, tell us about this wedding.

Thuy, ever since she was younger--

She's wanted to have that princess feel
when she gets married.

And I wanna give that to her.

Where we're gonna get married,
she's gonna come in on a white carriage.

[gasps] What?

And it's gonna have Christmas trees,

it's gonna have garlands,
it's gonna have cranberries.

-Ooh, cranberries.
-And candles.

Essentially,
think of a classic Christmas movie,

and then just slap that
into our reception room.

Oh, wow. We have work to do, huh?

We have some work to do,

but we gotta dig into
the food part of this, right?

-Yes.
-What do you guys like to eat?

When it comes to desserts,
I really like rich chocolate flavor.

-I love marble cake--
-Hold on. You're into chocolate?

Yes. I like chocolate
on top of my chocolate.

-Yes.
-Gonzo.

But Thuy likes desserts
with fruit infused into it.

-So a little bit of acidity in there.
-Yes.

Are you looking for something traditional?
Kind of, like, wedding cake?

Or you're ready to be surprised
by something completely different?

Ready to be surprised.

But that being said,
Thuy has always envisioned a cake

that incorporates that Winter Wonderland
feel and look that we both love.

Okay, Octavio, I am so excited

that we have this opportunity to show up

for you and Thuy on your special day.

You wanna make her feel like today
she's going to be the princess.

I always love seeing thrones at a wedding.

-Thrones?
-Yes.

She's a queen, he's a king,
they get married.

I'm picking up "magical fairy tale."

But I don't know if I wanna go with, like,
the typical Disney castle.

Why don't we give them a castle
that's, like, more artsy and abstract?

[Ashley] Okay.

Think about like, the castle
that's, like, sitting on the cloud.

[Ashley] Gonzo and I,
we're gonna make a five-tier castle cake.

It's going to come up
from a chocolate sculpted rock

coming out of these wafer paper
and cotton candy clouds.

You know those galaxies cakes,
with, like, the mirror glaze?

-Oh, like the glaze that pours on it?
-Yeah.

Imagine if we got this in a way
where it looked like

middle-of-winter snowstorm.

Could we pull that off
if we glazed this entire cake?

I mean, I've never done it
with one, two, three, four, five tiers.

Definitely a huge risk
that I'm willing to take.

[Gonzo chuckles]

Let's make some crowns.

Okay, but the crowns
have to sit on something.

You're just gonna give them a crown?
Like, here.

What usually is a crown sitting on?

Maya-Camille?

Pillows.

-Pillows.
-Yes.

Oh yeah.

-[Christophe] Today, we are going royal.
-That's cool.

We are bringing two thrones,
two pillow cakes,

which will be orange and cranberry flavor

with a crown on the top.

Then on the side of the throne,
two big sugar showpieces

that will hold that orange tart
that Maya-Camille is going to make.

I love making, like, sugar showpiece.

Christophe is all about the aesthetics.

What if you made me some sugar shelves,

and the guests,
they're able to grab a tart?

I am all about taste.

I think you are setting
the expectation pretty high today.

Well, I have high expectations
for us as a team.

We're Bake Squad. We're gonna
make it happen somehow, some way.

Um, that's gotta be bigger, dude. Bigger.

Bigger.

Bigger!

[both chuckling]

I don't know about you, but I wanna take
my French brother down.

-They better have to up their game.
-Oh, they better.

-He's been being chosen too much lately.
-Yeah.

-It's our turn.
-Exactly.

It's a wedding. I'm a cake artist.

Gonzo, amazing chocolatier. Come on.

-I'm excited.
-We got this.

-Hey, Christophe?
-Yeah.

-Going down.
-Oh no.

-Butter.
-Okay.

Today, it's all about being whimsical.

This is one of the biggest
chocolate chunks I've ever worked with.

So the first thing that I start doing

is carving down
this giant block of chocolate

in order to make it look like
an actual rock,

which is gonna be holding
this massive cake.

We're talking about
40 pounds of chocolate.

[Ashley grunts]

-It's heavy.
-Oh my God.

[Gonzo] So I start taking down pieces
that just don't belong

in order to make it look like a rock.

Ooh, boy, this is a lot of chocolate.

I feel like
I'm the Michelangelo of chocolate

and this beautiful rock
is just my piece of art.

[tapping]

-Is the noise bothering you, honey?
-Love you.

[pop singer] ♪ Got a good feeling ♪

-[Ashley] Whoo!

♪ Mix, mix, mix
Make a beautiful sugar showpiece ♪

Today, for Octavio and Thuy,

we are bringing royalty
to the headquarters of Bake Squad.

Maya-Camille
is jumping on all the tasting parts,

and I'm going to start to work
on my sugar showpieces.

Okay, so I'm preparing the silicone
to shape the showpiece.

So this is really important
to follow the curves

and have a really nice movement over here.

I'm pouring all my bases
for the showpieces.

I'm doing some spheres.

One sphere will have
almost like a magical effect inside.

It's a whimsical
Winter Wonderland over here.

-Christophe.
-Loving it.

-Hi, chef.
-You talking to yourself?

-Long time no see.
-Long time no see. I know.

Maya-Camille, come over here.

You are pulling out your finest art form,
your sugar work, and you're going for it.

You're not doing just one type
of sugar technique or two types.

We're talking six, seven types
of sugar technique.

Oh, yes, I'm going to town.

Okay, so give me the lowdown
of this vision.

So you are looking at thrones
fit for a king and a queen.

Okay.

[Maya-Camille] The sugar structure
is going to frame the thrones.

Is there no cake?

Oh, there's cake.

-What are these cakes? Which part--
-Pillows.

-So you're making pillow cakes?
-Correct.

I'm going to layer-cake town.
Don't tell Ashley.

No-- Well, that's what I'm thinking.

So two pillow cakes. Is-- Are--

Do his and hers match,
or are they complementary?

We haven't decided
how we're going to decorate the cakes.

Color scheme, agreeing on that,

against at least the blue sugars

we just saw Christophe pour and set…

That'll be an important thing.

-Yes. Mm-hmm.
-We want this to feel cohesive.

Anything you're worried about?

Well, we don't have thrones.

We just like--
We just have the concept of thrones.

How big are we talking?

I was thinking like seven or eight feet.
I don't know if that's possible.

You're worried about
whether I'm gonna deliver now?

I'm on thrones.
Y'all have to deliver on the rest of it.

[Christophe] Okay.

All right, Gonzo. This is where--
What we're looking at for our cake now.

Okay. Imagine, like,
a foot and a half on the base.

Okay.

-So that's--
-At least four feet, right?

-Holy cow, that's gonna be tall.
-[chuckles]

There is a lot more pressure on this one
because we're doing a wedding.

And if we're going against
Maya-Camille and Christophe,

I wanna go extra big on this one.

-What are you doing there?
-What are you doing? Get out.

Come on.

[Christophe chuckles]

We're gonna give Octavio and Thuy

the fairy-tale wedding cake
of their dreams.

Thuy loves fresh fruit,

so we're gonna make a vanilla cake
with a mixed berry compote

and cream cheese icing for Thuy.

I'm doing mixed berries,

cooking them down
with a little bit of sugar,

and then it comes down
to this really beautiful jammy consistency

that I'll use in the middle
of the cake layers.

For Octavio,
we have to show up with marble cake.

It's his favorite. We're gonna deliver,

and I know he's gonna love it.

-[rock song plays]
-♪ Another day ♪

♪ If I can get through with this
I'll let you try again ♪

[Tosi] Six hours to go, Bake Squad.

-Hey, Christophe.
-Yes, Maya-Camille.

When I was growing up,
my cousin used to make me a cake

using lemon-lime pop.

So for this cake,
I was thinking that we can use orange pop.

Orange what?

-Orange pop.
-Pump?

-Pop.
-Pump.

Soda pop.

[Christophe] Ah, soda.

I never heard about soda in a cake before.

Never.

What the pop would do is,
it would make the cake even more moist,

but the carbonation in the pop
will act as a leavening agent for the cake

to help it rise.

-I trust you. You're the queen of flavor.
-[chuckles]

[Maya-Camille]
I'm making two massive cakes

that are going to be carved
and shaped into pillows,

and that is not an easy feat.

I need four sheet pans of cake
in order to carve a pillow out of it.

I have to bake the cake. I have to make
orange and cranberry buttercream.

I have to stack the cake.

I'm hoping Octavio
will have one bite of the cake

and it will win him over.

-[upbeat pop song]
-♪ I won't stop now ♪

♪ Till they stop the show ♪

All right, Gonzo.

Hello.

-[Tosi] Ash.
-Yeah.

-You got a sec?
-Yes.

I wanna hear
what the two of you are planning.

Gonzo, what are these elements
that you're working on over here?

So these are gonna be the turrets
of the actual castle.

I have these little molds
that I made out of acetate.

[Tosi] These are
the little tops of the turrets.

-These are the little towers.
-Correct. Yeah.

-This is a pretty magical castle.
-Yeah.

And we wanna go really elegant, modern,

and completely non-traditional here.

We want to glaze the entire cake
in mirror glaze, rather than any piping.

And that's it?

So we're glazing the whole massive cake--

[Ashley] All at once.

-Then it goes straight on the rock.
-I love the idea.

But your cake has to be done
with enough time

for Gonzo to come in to connect the dots
for this castle to feel like a castle.

-Totally.
-Not just, like, a five-tier cake.

Make sure you're always talking.

The best teams
are the ones that are talking nonstop.

-I don't think that's gonna be an issue.
-No, we like to talk.

-Get after it, you two. Good luck.

[Christophe] I'm making something
really beautiful right now.

I learned sugar work

when I was working
on a small island in France.

I was living in a castle.
Yeah, that was pretty cool.

Then I worked in
one of the best pastry schools in France.

And during my time in Las Vegas,

which I worked for about seven years,

I did thousands of sugar showpieces.

It's hard work, dedication,
weekends, nights.

It's like training hard
to get a black belt in jujitsu.

Hey, Gonzo, I'm ready to strain

the gelatin mixture
for our base so we can pour it.

-You just wanna look at the colors?
-Yeah.

It's gonna be pretty.

The castle is sitting on top of this rock
coming out of the clouds.

But what are the clouds coming out of?

I wanna make a big cake board

that looks like a magical lake or the sky.

Just give it another element.

-Ooh, that looks like constellations.
-Yeah, it's getting really--

[Ashley] Look at how magical.

If there's enough gelatin in there,
it's not gonna take forever to set up,

and it'll give us, like,
this nice translucent look.

[Christophe] Oh, la, la!

Are you making sugar too?

I'm making a sugar showpiece too.

-What?
-Just to piss you off.

Okay, so I'm going
to have to step up my game

and do something
in chocolate today, huh?

[Gonzo in French accent]
But I'm the chocolate guy.

Love it.

So right now this is a ribbon technique.

I'm putting together layers
of different colors of sugar.

When you think about,
from a little piece of sugar

that you can go three, four, five feet…

That's what I love the most.

[Christophe] The difference between
Ashley and Gonzo

and Maya-Camille and I today

is we are bringing
the whole scene to the wedding,

and they are making just a small cake.

Maya-Camille, we got this.

Loving it.

-[pop song plays]

♪ You're the crème de la crème ♪

The better it gets ♪

-You're my chocolate idol, Gonzo.
-Aww!

[Ashley] I love working with Gonzo.

It's a complete partnership.
We're in sync and communicating.

-What color do you wanna paint the rock?
-Gray-blackish.

[Ashley] I need to have the cakes ready
as fast as possible

so we have something to glaze.

-Ah, it's so sharp.
-That's smooth as a baby's butt.

Working with Ash
is actually really, really easy.

We're just two friends
coming up with an awesome wedding cake.

That's a great plus, 'cause great minds
don't always think alike.

I wasn't expecting
to have this cake that big.

You know we gotta go big, buddy.

I understand that,
but we only have one day.

Okay. I know, I'm working.
Do you trust me?

I always trust you.

But I just wanna make--

-Ah, ah, ah. No buts, no buts.
-I just wanna make sure that--

On the other hand,
we have Maya-Camille and Christophe,

and I could see that there's
a bit of tension going on over there.

-We said we are going to do two cakes.
-Yes.

So it's two times the amount of time
that you're spending right now.

-My name is Maya-Camille.
-Plus the fondant.

-My name is Maya-Camille--
-Plus the decor.

My name is Maya-Camille,
and I make miracles happen.

The biggest challenge with this dessert

is being able to trust each other
to build the whole display together.

-Let's make sure we get it done, okay?
-Yes. Bye, Christophe.

[Maya-Camille] So I have my own ideas,

and I know Christophe, he has…

[tuts]

…his own ideas.

Maya-Camille.

I am trying to figure out
how we can be cohesive…

I'm building the showpiece.

…and how I might be able to tie our ideas

into one uniform dessert.

This is where the shelf is going to go?

-I don't know yet.
-Okay.

[Tosi] Three hours to go, Bake Squad.

There's one pillow cake done.

Maya-Camille.

Fifteen more minutes
and I'm done with the showpiece.

Okay.

Christophe, all right, let's hurry up.

-Did you do the crowns yet?
-No. Next--

I need, like, five minutes.

I know that he wants it to be perfect,

but we're running out of time.

We have to get all of our elements
ready for Octavio

before he comes down those stairs.

[Tosi] Christophe, real talk.

-You gotta put that down, my friend.
-I will.

You're about to become
my number one public enemy.

Give me five minutes.

Bake Squad,
one hour until Octavio arrives.

There is a lot to do
to bring these visions to life.

Let's go.

All right, this one's at 32.
The temperature here is so important

because we're gonna be putting
a ton of glaze on the cake,

and we can't have it melting
any of the butter,

or else everything
kind of just starts slipping off.

If the glaze is too warm or too cold,

it can completely mess up
this entire design,

and we'd have to scrape everything off
and basically start over again.

All right, 31. We're good.

We have a five-tier cake
that looks stunning

and is perfectly flat-iced and white
in all her glory.

-Okay, game plan. Should we work--
-Two pitchers and let's go.

And now is the moment of truth.

[intense music plays]

[dramatic silence]

[pulsing electronic music]

[Ashley] I've never seen
a five-tier cake be glazed all at once.

No one's as crazy as we are.

[Ashley] I love the drips.

It's like the most beautiful thing.

We worked together
and pulled off something truly amazing.

Gonzo, Ashley, you happy?

[Ashley] I think this is so beautiful.

[Tosi] I think it looks great.

Next thing that we need to do
is put it on top of the rock,

and hopefully this rock is actually
going to hold the weight of this cake.

Lift it from--

-You're lifting too?
-Yep, I'm lifting too.

It'll hang in there.

How is that?

-Yes.
-Great.

-Christophe.
-Yes, chef?

Okay, so your pastillage,

this sugar paste that's gonna harden
into the shape of this, are--

Is this your cutout?

-Yes.
-King and queen?

Uh, the queen will be a little bit
more elegant, and I will do it freehand.

Okay, got it. Ah, I see.

How does it fit?

-Oh, yeah.
-Does it look good?

And make them all come true ♪

Christophe, Maya-Camille,
this is what we're looking at.

There's a whole lot of white.

The thrones are gonna have white seats
and gold embellishment.

[Maya-Camille] We have to
do something with these pillows,

or else they would get lost

in the grand scheme of all of the elements
of our dessert and the thrones.

-How about red?
-Like a deep red?

[Christophe] So normally,
I'm working on my own.

I am the one who's taking
my decision here.

But today we're working as a team,
so we have to go back and forth.

We have blue,

we have gold, we have silver.

That's a lot of colors going on.

It's really difficult to agree,

as each artist has his own vision.

Go ahead and start airbrushing the crown.

It's like we're this old married couple…

I don't know what to--

-Gold for the crown.
-Yeah. I need to finish this first.

…that can't agree on
which color bedspread to get.

-Let's just make both the crowns gold.
-Okay.

-Okay?
-Okay.

And then his pillow can be dark blue.

-Can we do light blue for her pillow?
-Yes.

Okay, let's do that.
Hurry up, Christophe. Let's go. Let's go.

Bake Squad, just 30 minutes remain.
Time to move!

I need you to help me
brush this with silver.

[Ashley] You got it.

Now that the cake is glazed,
the final things we need to put together

are all the final chocolate details
on the cake.

-I'm gonna start splattering the cake.
-Okay.

Octavio mentioned
he really wanted a magical,

like, surprise element in this cake.

Gonzo and I wanna hide
a picture of Thuy and Octavio

inside the cake behind a castle door,

so when he opens it up,
you can see the happy couple.

The image is made out of
an edible icing sheet.

Technology rules.

-Ay, yay, yay, yay, yay.
-[Maya-Camille] Ay, yay, yay.

Yes, I know that these cakes

may not look hyper-realistic,

but they're still going to be
super delicious.

I hate cakes.

[Maya-Camille]
Finally, the tarts that we're making

are a strip of cookie dough…

It's so nice.

…and into the hollow tart shell
is an orange curd.

It's not hanging in midair,

but we want to create that illusion.

And magic is all about illusion.

Maya-Camille, it looks great.

It's like a whisper,
because it's so delicate.

Christophe and I work well together.

I just feel like we just hit
a small speed bump.

It's not easy to create with someone else,

but I'm pretty proud
of what we were able to do.

We're the king and queen
of this baking thing, baby.

Well, I don't know about you,

but I feel like I've just
stepped inside a fairy tale.

Octavio, let's see if they taste
as good as they look.

-What do you say?
-Sounds good.

-Let's go.

I say, wow.

-I love it.

[Octavio] I love the castle aspect,
and also, I'm a huge Harry Potter fan,

and I feel like it also kind of has
that Hogwarts look and feel to it.

-Good.
-[Octavio] You guys nailed it.

You guys just-- You know me.

We wanted to go with something modern.

That's why we applied the glaze technique

and you have the different
variation of colors.

You see this door right over here?

Yeah.

[Octavio] Aww!

It's like the entrance to the castle,
which is the entrance of our heart.

Exactly.
That's a picture of the two of you.

-You guys thought of everything.
-Yeah.

Okay. So give us the rundown of flavors.

[Ashley] Today is about the two of you.

The top is completely for Thuy.

We have a vanilla cake
with cream cheese frosting

and a mixed berry compote,

followed by-- What do you hope it is?

I'm hoping chocolate marble.

Yes!
-Yeah! You got it!

Marble cake, chocolate ganache,
vanilla buttercream.

Your dream in a cake.

Okay, Octavio, this one's for you.
You're our guest. Oh, my Lord.

[Ashley] That's Thuy's.

You have to taste test
to make sure she's gonna like it.

Wow.

I'm not gonna lie.

I honestly feel like I'm eating a cake
that Thuy would pick herself right now.

[Tosi] That's a big deal.

I mean, I love it too. It's delicious.
Don't get me wrong.

The berry compote is so fresh.

It's a little toothsome
because of the berries, which is so nice,

because then you really appreciate

the smoothness
of that cream cheese frosting.

Ooh, look at that beautiful vanilla
and chocolate cake marble together.

Chocolate ganache, and then you've got
your beautiful buttercream.

This is your layer, my friend.

I love the texture. It's moist,
but then there's that chocolate part

which also kind of
brings a thickness into it.

The buttercream
really pulls it all together.

I gotta say,
this is an incredible triumph.

I'm happy. I can see the joy in your eyes.
That's really touching.

What I love about watching
the two of you work today

was that you were
able to maintain your strengths

and celebrate one another's.

we have so many
different elements of desserts

that we're surrounded by.

How did you bring it all to life?

You said that you wanted your fiancée

to feel like a princess
the day of the wedding,

so we really wanted to represent that.

[dramatic music plays]

This is 100% sugar showpiece over here.

-[Octavio] All this? Wow.
-[Christophe] All of this.

[Christophe] So the princess crown,

which is going to be
a queen crown pretty soon,

is made out of pastillage.

And inside the cake,

Yes. This is a cranberry-orange cake

that is super moist
because we added orange soda pop to it.

So I am very excited for you to try it.

And I love the colors.

My favorite color is dark blue,

and then Thuy's favorite color is teal.

You guys nailed something
that we both like.

I think Thuy would love it.

Y'all, this cake is full-on flavor.

I have never had soda in my cake.

And honestly, it's delicious.

It gives it a nice aftertaste as well.

At the beginning,
you taste the cranberry and citrus,

and then afterwards you start to taste
the soda pop and you're just like, "Ooh."

-[Tosi] It's intriguing.
-Yeah.

It keeps your mind intrigued.

[Tosi] But it would only be incredible

because the cranberry is also so bright.

So in order to complement the cake,

we decided to do an elevated tart

with the same flavor as your cake.

When you talked about you and your fiancée
loving things that are magical,

we imagined a tart
that seemed to defy gravity.

And I love the shape.

and I wish I hadn't,
because they're both so good,

I mean, I think the beauty of teamwork

It's such a great interpretation
of what we wanted.

We wanna feel like the king and queen
of our castle, of our kingdom.

It's just everything that I've envisioned.

It was delicious,

and the texture was just moist.

But truly, I think the thing

that stood out the most
was the little details.

And that's truly something
that kind of really stuck with me.
