the founder of Milk Bar.

I built a baking empire
on sweet, delicious cookie dough,

and now I've built a squad

to make people's dessert dreams come true.

Christophe,

a pastry illusionist.

a flavor fanatic.

Gonzo,



a champion of chocolate.

And Ashley,

the queen of cakes.

Individually, four brilliant bakers.

But I brought them together
to battle it out

and see whose dessert will be chosen
for someone's big day.

Today, this might be
your biggest challenge yet.

-[Gonzo] All right.

-Yeah.

Let me introduce you
to our guest of honor. This is Jody.

-Hi.
-Hi, Jody.

Hi, Bake Squad.

Jody, these four can do more with a whisk

than Spider-Man can do with a web.

You're right.

No, not a cowboy! Spider-Man!

[all laughing]

[Tosi] Now, Squad, Jody needs us

because she is planning a major milestone.

What is it?

So this is my sister Aubrey's wedding.

It's a wedding!

-It's a wedding.
-Wedding!

An epic wedding.

-[Christophe] Oh, wow.
-Yeah!

Walk us through the sweet love story.

[Jody] Aubrey and Tanner,
they're both musicians.

Tanner is a drummer,
and Aubrey is a singer as well.

-Oh, wow.
-All right.

They met in high school.

He had the eyes for her,
but she was kind of waiting.

They crossed paths,
actually, eight years later.

He asked her to go record at a studio,

and she said, "Sure, why not?"

And she went, and it's history.

So they love to play music together,
and they love hiking and camping.

-Nice.
-They're super into nature?

-Totally.
-[Tosi] Do they have pets?

Aubrey has two cats, Willie and Locket.

[Bake Squad] Aw!

Come on.

So cute.

-[Tosi] Cats are members of the family.
-Yes, they're family.

Right.

Okay, tell them about your event.

[Jody] Okay, so the event
is at this really unique farm.

It's, like, adorned
with thousands of white roses.

-All right.
-About a hundred people at this wedding.

-One hundred?
-One hundred people?

One hundred people. Can you handle that?

-Yeah, we can.
-Oh, yeah.

Break down the dessert part of it for us.

What do they love
in the wild, wonderful world of dessert?

So Aubrey's favorite ice cream
is cookies and cream.

Tanner loves apple pie,

New York cheesecake, you know.

Okay.

Crème brûlée. They love crème brûlée.

Oh, let's do some decadence.

Aubrey.
Her favorite dessert is bread pudding.

I love…

Bread pudding?

-…bread pudding.
-[Christophe] Give us more.

We just want something
extremely unique and different.

-Okay.
-Make it exciting.

Does she know you're here?
Does she know what the squad's up to?

Oh, no.
She put me in charge of her dessert,

and she just said,
"Don't spend too much money, Jody."

I was just supposed to get
a small single-layer cake.

We're not doing
a little one-tier cheapie cake.

That's not the way we roll at Bake Squad.

to complete your bake.

-We gotta get busy.
-Yeah.

Start getting those ideas down.

[Ashley] Time for a wedding.

-Are you excited for this?
-Yeah.

Gonzo, what are you doing over there?

I'm thinking about doing something
totally different.

I'm gonna make a wedding cake.

I haven't made a wedding cake
in at least six years.

A four-tiered wedding cake.

I'm deciding to make just the traditional
four-tier wedding cake,

'cause I don't wanna
mess around with tradition.

Hold on a second.

[Gonzo] There's gonna be one giant chunk
I'm taking out of the middle.

But we're adding a whole bunch
of edible flowers on the inside.

I'm mainly inspired
because of how outdoorsy these people are.

Oh, right?

So I wanna do something
that pretty much represents

their passion for the outdoors.

-So…
-Four-tier?

You're coming in hot.

I'm coming in hot for sure.

Hmm.

I can't just do
a traditional wedding cake here.

Ideas, ideas.

Can you imagine me doing
a regular wedding cake

when I have Gonzo
doing all these crazy things? No.

I'm gonna flex my muscles some here.

And I really loved the idea of their cats.

Maybe I am a little bit
out of the box on this one.

I've gone a little crazy
with ideas before,

but this is not just any wedding cake.
This is a Bake Squad wedding cake.

It's gotta feed a hundred people,

so I'll probably do the head out of
modeling chocolate so I get good detail,

but I'm making the entire cat out of cake.

Do you like cats, Gonzo?

I'm more of a dog person.

-I'm gonna pretend I didn't hear that.
-[chuckles]

[Christophe] Musician… What can I do?

I got it.

Cheesecake, chocolate cake,
then chocolate work.

Jody, you know…

She was saying that

she didn't have too much money
to spend on a dessert.

The winning cake has to be grand.
It has to be amazing.

So being able to provide this to people

and create a lifetime memory,

that's why we're here.

All right, Christophe.

I am very intrigued.

Talk me through it.

Well, they're musicians, they love music,

so I wanna build a freakin' huge drum set

out of chocolate.

Like--

Like a life-sized drum set
out of chocolate.

A cymbal?

Ooh, the cymbal.

Yes, forgot about that.

-I'm gonna do a cymbal out of sugar.
-Cymbal. They're gonna freak out.

It's not something that I've ever done.

I have the opportunity
to blow everybody away.

You're stealing a page
out of Gonzo's book today.

Did you see that?
He's gonna have to give me some pointers.

Maya-Camille.
Is this part of your ideation?

-It is.
-A little bit of drawing?

-Yes, a lot of flavor.
-Of course. Sorry, excuse me.

I am known for creating amazing flavors
and amazing flavor combinations.

I own a bakery that specializes
in pies, quiches, and tarts.

I like to reimagine conventional desserts.

It may not always look like
what you expect,

or taste like what you expect.

Actually, it tastes better.

Okay, talk me through it.

The bride loves bread pudding,

but she doesn't like,
you know, your typical cake.

The wedding is gonna be, like,
in a woodsy area.

I didn't want it to feel pretentious.

And what's the most non-pretentious
thing you can eat?

It's something that relies
on day-old stale bread.

-Yes.
-So I was thinking…

-No.
-Yes.

…tiered bread pudding cake.

So each one has a different flavor.

[Tosi] But bread pudding is heavy,

so you're gonna have, like,
30, 40, 50 pounds of bread pudding here.

-Is that possible?
-I think it could be.

If there's one person I know

that is unflappable
under pressure, it's you.

I'm gonna start
with the graham cracker crust over here.

The whole concept of the drum set
will be to crack open the chocolate

to discover every single element
that is hidden inside the drum set.

This is not just a drum set
out of chocolate.

The bass drum will be filled
with this peanut butter caramel candy bar.

Let's roast some peanuts.

The tom-tom will be the chocolate cake.

Eggs, oil, cocoa, butter, and flour.

And the snare drum will have
a New York-style cheesecake

with strawberries over the top.

Right now, I'm spreading down
the graham cracker crust.

The difficulty to work with chocolate
is definitely precision.

You gotta find the right thickness.

Otherwise,
your entire chocolate can collapse.

I understand the importance
of a wedding cake.

I am married
with my beautiful wife, Wilma.

And I remember when I got married.
It was in Hawaii.

My wedding was pretty small, you know.

Had a five-course meal
and a little cake for dessert.

But of course, we are the Bake Squad.

We need to do something grand.

[singer] ♪ Are you ready, are you ready? ♪

Cheesecake, done.

♪ Uh-huh, uh-huh, are you ready? ♪

You know, bread pudding
is one of those things that I can say

my bread pudding
is the best bread pudding I've ever had.

For Aubrey and Tanner's wedding,

I am giving Aubrey exactly what she loves.

I'm doing four tiers of bread pudding.

Cinnamon.

So I wanna start with the flavor
that Tanner loves the most,

which is an apple-spiced
bread pudding tier,

and then a cinnamon-sugar pretzel tier.

Crème brûlée,
which has lemon lavender infused in it.

Lemon extract. That's so good.

And last but not least,
triple-chocolate bread pudding.

[Tosi] Six hours to go, Bake Squad.

Oh my God.

[Gonzo] Oh, yeah.

I'm making this giant
four-tier chocolate wedding cake

with Nutella and caramelized hazelnuts,

and carved down the middle,
with a lot of colorful edible flowers

and a beautiful chocolate butterfly
on top of it.

I haven't done a wedding cake
in such a long time,

and there's a lot of pressure,
'cause it needs to be perfect.

-Are you making cake too?
-Yeah.

-I'll need your sleeve.
-I'm the chocolate guy!

"I'm the chocolate guy."

[pop singer]
♪ They call me the best, the greatest ♪

[Ashley vocalizes]

[Christophe] ♪ Chocolate cake ♪

-Lift with your knees.
-Chocolate cake in the oven.

[pop singer] ♪ It's good to be king ♪

I don't believe my eyes.

-Look at me.
-Cake at the chocolate man's station?

-I'm channeling my inner Ashley right now.
-No, it cannot be.

-You know how to do it all.
-For sure. I've done this many times.

I'm just a little bit rusty,

especially because we're gonna
cover this in fondant.

-The execution has to be sharp.
-It has to be perfectly spot-on.

I know someone that can help you.

I'm gonna ask that girl if she can help.

She's got a great machine for it,

so I'm gonna be
working out of her station.

So how many tiers are we talking?

We're going big.
I'm going with four-tier wedding cake.

Oh, see, I gotta make mine tall.

-I have a question for you.
-Yes.

-You're married?
-Yes.

What did you have as your wedding dessert?

What we did, we went to a little bakery,

and we got this tiny little
red velvet cake.

The funny thing about her?
She does not like chocolate.

That's when I found out
she truly loves me.

[Tosi] So many women, I bet,
would marry you for the chocolate.

-She didn't marry you for chocolate.
-She did not care about chocolate.

[Maya-Camille laughs]

To make this freaking awesome…
There we go.

So I'm a cake artist,

and I really wanna make Aubrey and Tanner

something very memorable and unique.

I'm not getting stressed today.
It's not happening.

And the only vision
I saw in my head was cats.

[cat meows]

I couldn't stray from there.

"Stray." Get it? Stray cat?

I decided to make two giant sculpted cats.

They are going to be filled
with their favorite flavors.

Cookie dough, cookies and cream…

Smack it.

…and just adorned
with all these beautiful sugar flowers.

I hope this gets done.

-All right, Ashley.
-Oh, hey. Hi.

-[Tosi] So I see gum paste flowers.
-Yeah.

So, what's going on here?

I'm doing it as quick as possible.
I'm using this veiner.

It's a silicone impression.

And then the ball tool,
you just roll over the edge

and it pulls up the gum paste.

I see this and I go, "Ashley's going,
like, delicate floral wedding cake."

Delicate floral with a little bit of funk.

-Of course.
-I'm gonna do their cats.

One's gonna have a bow tie,
and I'm gonna put a veil on the other one.

-So not tiered wedding cake?
-No, not tiered wedding cake.

Why not traditional?

The couple, they're not traditional.
They're artsy.

I wanna give them something
that is cool like they are.

Are you gonna have enough time?

You know, I'm gonna do my absolute best.

[energetic, upbeat pop music]

-Hey, Gonzo.
-Yes, sir.

Do you have a recipe
for peanut butter filling?

I wanna make a bar, a chocolate bar.

For the peanut butter layer,
what you wanna do

is just mix 50% peanut butter,
50% tempered white chocolate,

and that's gonna have, like,
a similar consistency to your nougat.

All right, let's do it.

Perfect.

So we gonna have…

peanuts on the bottom.

All right, the caramel is ready.

Hot.

Gorgeous.

Here. Let's put this in a freezer
for about an hour.

Peanut butter du jour done.

I have to go taller
because you're going tall.

Bring it on.

Okay. It's been broughten.

[chuckles]

We're gonna pop this in the freezer.

And now I'm working on
my cinnamon apple layer of bread pudding.

I'm gonna add some spices.

That ginger
kind of gives us a little kick.

["Hook Ya" by Clooney plays]

Okay, now it's time
to work on the chocolate.

Usually, my friend Gonzo,
he's the chocolate guy.

But today, I'm gonna take it over.

-Okay, Gonzo. I'm taking some chocolate.
-Yeah, buddy.

Like… a lot of chocolate.

I have, like, Frenchie
going all chocolate on me now.

He's like, "Ha, ha, ha,
I'm working with chocolate now."

Time to spread the chocolate.

Play with sugar. That's your thing.

Let Gonzo play around with chocolate.
That's what I do.

Sorry.

-[Christophe] All right.
-What is this?

-Gonna be the top of the drum, like this.
-[Ashley] You are nuts.

So to make the drum out of chocolate,

I will need two ring mold with acetate.

I have about half an inch of space

between each ring.

Today, I get the drum set done.

That will be certainly
the most challenging display

that I've ever done in my entire career.

Let's put this in a cooler.

-[Maya-Camille] Freezer?
-Yes. Cooler.

[Gonzo] It's a lot of chocolate.

You're going hefty on this, huh?

[Christophe]
A party in the cooler! Whoo!

Maya-Camille. I like what I see.

-First of all, beautiful.
-[laughs]

That is, like, picture-perfect.

Oh my God.

Oh! This is fluffy and delicious in a way

that gives me the vision of luxury

in the form of
a bread-pudding wedding cake.

I'm going to use that as the base

for the triple-chocolate
bread pudding layer.

Which is really smart,
because a bread-pudding wedding cake

is going to be very hefty.

So I was thinking of just doing
one layer per flavor.

Then I see Gonzo's
little situation over there,

and I refuse to be outdone by him.

So instead of doing one layer
of apple-spice bread pudding,

I decided to do two.

And instead of doing one layer
of triple-chocolate bread pudding,

I have two layers of the chocolate.

I've got to up the ante
or else Gonzo will beat me.

[Tosi] You're going after everyone today.

-I'm trying to come for their jobs.
-Huh?

Dangerous.

It's all about height now.

I am here to win this challenge.

Gonzo is making a "cake" cake.

[Ashley] It doesn't look long enough.

-I didn't measure it, I eyeballed it.
-Make it the front. The part you cut out.

Ashley is a lifesaver at this point.

It feels good that I have her right there
for moral support.

-[Ashley] Didn't doubt you for a second.
-Okay.

There's no way to do this cleanly.

Sculpting a cake requires cake,
buttercream, and a serrated knife.

Here's the back of the cake.

You get your general shape.

Everything goes in--

You start carving away
and blocking out your shapes,

and then you start
refining the details a little more.

You'll make one cut,
and then you'll see it.

Kitty-cat, your neck is here.

That girl can carve out some cake.

Oh my God.

This cake just--
My entire leg just fell off,

or something.

Damn it.

Hold on.

Do you want a small little knife?

Mmm. Hold on, I got it.

Vet Ashley
steps into the Bake Squad kitchen.

This cat has a broken leg.
Watch out, everybody.

I'm coming to the rescue.

Let's see.

And then-- Okay, great, great.

And now I'll just cover it in buttercream.

-You won't be able to see it.
-Yeah.

You know, stuff happens.

Creative problem-solving
is super important.

All right, the leg looks
a little cray-cray now,

but it'll all take shape.

[Tosi] Three hours to go, Bake Squad.

That smells so good.

-Oh, you smell it?
-Yeah.

[Maya-Camille] Wow, Christophe.

What the heck is that?

It's a bass drum.

-[Maya-Camille] Wow.
-Wow.

I'm impressed, dude.

Got it?

That's much lighter than I thought.

[Christophe] Awesome.

[Tosi] Christophe.

-What do you think?
-Look at that.

Snare drum, tom-tom.

Where the heck
is she getting all of these things?

[Tosi imitates drum roll]

She must be a magician.

-Look at how shiny it is.
-Or she has a lot of connections.

Oh, and then the cymbal.
Where does the cymbal go?

That is so cool.

[Christophe] This is my sugar cymbals.

Christophe, this is gorgeous.
It looks a little bit like a planet.

-A little sheen in the sugar?
-I put a little bit of glimmer powder.

You can kind of get mesmerized
looking at it.

Yeah.

[energetic rock music playing]

Christophe, that's looking great, bud.

-You're doing great. So proud of you.

Okay, that is--

Height-wise, that's good.

Right here you have a little nostril.

So I'm not looking to do
two super-realistic cats.

I wanna make these cats
elegant and regal and really vibrant.

We have a cat.

So I'm going to completely
cover them in gold.

I wanna give Aubrey and Tanner

the most beautiful,
memorable, magical cake

they've ever seen in their entire lives.

Yes, chef. Oh my goodness.

[Maya-Camille]
The couple loves crème brûlée,

so I want to be able
to substitute a crème brûlée.

So I'm making sugar shards,
which has edible flowers

that goes all around the final tier.

How are you feeling?

Just trying to get it up.

Well, you have your dowels in here,

so you know that'll support.

I think the question is
the structure of how it builds up here.

I am very concerned about
the structure not being stable enough

for me to get the other layers on top

and to finish this bread pudding in time.

I'm going to add an extra dowel
in my "fault line,"

so an earthquake doesn't happen.

Okay.

I mean, Maya-Camille,
it is a work of art in the making,

but it's gotta be just right.
There's no in-between.

-Gonzo.
-Yes, sir.

-Your cake starts to be beautiful, huh?
-Yeah.

Oh, wow.

I'm running out of time,
so I need to get going

and cut everything down the middle
in order to put all these flowers there.

When you cut
just a huge chunk out of this,

it changes the weight distribution
on the cake.

So the cake could tilt,

or it could fall off,
and that could be a disaster.

Perfect.

Beautiful work.

Crack-a-lackin'.

I feel like you could make
sugar sunglasses.

-I think Beyoncé would buy it.
-They're very Beyoncé.

[Maya-Camille]
I'm looking around the room,

and everyone's cakes
look absolutely beautiful.

But food is also about
what you eventually put into your mouth,

and does it taste good?

My desserts stand out

because my food tastes amazing.

Oh, that's gonna be so cute.
